This is it! An authentic tasting Delhi/UP chole recipe, just like my recollection from the past. Thanks, Chef Ranveer. Roasting the spice mixture to the proportion mentioned, adding hing to the ghee, no onion/garlic/tomatoes, slow cooking with more ghee and chole water, did the trick for me. I used a mixture of anwla, tamarind, and a little anardana, for the beautiful black color and balance of sour, with sweet undertones. No tea leaves are needed. Perfect indeed!
Dear Arnab i also tried this recipe but my chole taste bitter if you have any idea what could be the reason . Please tell me I can't find may it ( lohe ki kadhai, methi dana used in masala or chai patti).
@@abhiboy1877 you must have left the chole for too long in the loha kadai....since there is tamarind water which is an acid, it leaches iron out of the kadai and ruins the taste. You need to transfer teh chole out after the cooking is done to avoid the metallic taste. There is nothing else here to ruin the taste of chole.

The thing is, we never get to see what the highest quality Indian chefs make, because there is a lack of such people on youtube. No offense to others, but most have only a basic understanding of cooking and their recipes are also basic. That's where you fill a gap that no one else can. You operate at the highest levels of Indian cooking and that shows in the nuances of your recipes, the attention to spices and flavors and textures. Your recipes are several steps above every other youtubers as a result because you are an actual chef operating at the highest level. I'm just glad that we get to learn how these classic recipes are done at a world-class level. Thanks. You can say my dream is to reach a level of refinement in my cooking skill where I can prepare the complete dish (chole + bhature) from scratch with this exact manner. I'm not there yet, especially for dishes involving dough but it is my goal to get there.

The thing is, we never get to see what the highest quality Indian chefs make, because there is a lack of such people on youtube. No offense to others, but most have only a basic understanding of cooking and their recipes are also basic. That's where you fill a gap that no one else can. You operate at the highest levels of Indian cooking and that shows in the nuances of your recipes, the attention to spices and flavors and textures. Your recipes are several steps above every other youtubers as a result because you are an actual chef operating at the highest level. I'm just glad that we get to learn how these classic recipes are done at a world-class level. Thanks. You can say my dream is to reach a level of refinement in my cooking skill where I can prepare the complete dish (chole + bhature) from scratch with this exact manner. I'm not there yet, especially for dishes involving dough but it is my goal to get there.
