For those confused, this is an artistic choice on Spiegelman's part; Jewish people are portrayed as mice, Nazis as cats, Poles as pigs, and Americans as dogs. Later on there's also a Gypsy who's portrayed as a moth.
Just for informing (don't want to be rude, sorry), but the original name for them is Roma (Romani), 'cause "g#psy" is what the people started to call them. But, yeah, unfortunately the majority of the people only know them by this name :")
