I've been a baker for most of my 68 years, and still learned something new from this episode! Pie was never my go-to project, instead choosing to make cookies and cakes. Pie crusts always intimidated me. Your method of mixing the dough into pea sized balls, with a fork, chilling, and NOT making it into a ball (I always made more of a flattened disc shape, before chilling) was very enlightening! Also, the steps you took to roll it out by, first slightly pressing the edges all around, before focusing on the center, was mind opening! Thank you so, so much for recording this video... I can see myself watching it over and over, until I can picture Jamie's actions, and hear her voice in my ears, while I make my next pie! I also loved the sister to sister banter, throughout the podcast :) Oh... and all of the sweaters were gorgeous, too!

I'm month late to the party. But I love pie too. My grandma and mother taught me, we use the old Betty Crocker oil crust. And wax paper is where it's at, I like to wet the counter a bit. Love your kitchen!!

My trick for getting the pie out when I make pecan pie is one of two things, Line the bottom with parchment, or use the pie dish that resembles a tart pan, with a removable bottom!

Oh you’d be surprised how fun it can be to make a pie. It is made for sharing and you become everyone’s beat friend. It’s like having a bowl of love to share. I hope you give it a try.
I’m a retired Home Economics teacher-yeah some of us are still living. Be aware that the old cliche “As Easy as Pie” is true. I had a Mom who threw together a pie in less than 20 minutes; I learned early. I baked pies in a Mom and Pop bakery in college. I don’t call myself a Pie Goddess because it tells all those in fear of pie crust that you must be a goddess to make a pie. I bake differently than Jamie and that’s okay. Jamie’s pies look delicious! One more thought-according to my local Barista who won the international Barista Championship in Iceland (don’t remember the year). Coffee should not go in the freezer. I recommend an ‘Airscape’ ceramic container.
@@Cadyjaxknits gonna step in as a former barista and say I have heard that coffee should not go in and out and in and out of a freezer, but for long term storage it's okay. It has to do with the beans' oils and temperature fluctuations. I'm frankly impressed that the beans last long enough for you to bother storing them - a bag of beans lasts us a week, tops!
The coffee that goes in the freezer is the decaf. We only bring that out when we have guests and an after dinner dessert. Our daily coffee goes fast and is never frozen. Appreciate all the insight. Who knew?? It really does seem to hold up well.

This was great, I can’t believe you mentioned grasshopper pie. That was our wedding dessert 39 years ago! My mother-in-law and her girlfriends made pans and pans of it😊. Really enjoyed your detailed pie crust show and tell. I learned some great tips💕
Ah yes the grasshopper pie. What a fun treat for your wedding. I bet they had fun making them all. It was hands down my favorite until I realized it was mostly marshmallows and cream. That’s one pie I wish I hadn’t “seen under the hood” - took the magic away for me. It still reminds me of my grandma Rosie at Christmas.

Just as I see my knitting as an act of intentional practice, it's very clear to me that your pie baking is also a practice which invites in love, intention, craft and care. I was astonished to see your process for making your pie crust - I had always made pastry into a ball before chilling, but yours looks much better than mine has ever turned out! Also, we don't really have a tradition of pie baking here in Scotland, and with my own gluten issues, I must admit to not having made a pie for a very long time. But I was greatly encouraged when you said that the Pie Camp book had some gf recipes, and so now I'm just back from the shops having picked up a new ceramic pie dish. I just love pumpkin pie - again, not something we have a tradition of over here. I'm going to see if I can make a gf version. Wish me luck!

In my family, we have made fudgy pecan pie every year at Thanksgiving, along with pumpkin. The recipe is in the Hersey's Cocoa cookbook. The pie is like a fudgy pecan brownie in a crust. So good. I highly recommend.
You are so welcome. And YES, pie is all about the mood you bring to it. I try to infuse a heaping of love into each one. It can also be very therapeutic.
Amazing pies!! I am just drooling over them!! I will say that if you do Gluten free.... you must measure exactly..... how I do miss having the regular delicious pie crusts but have a good gluten free one that I did find through the King Arther Company website. It’s by Annalise G. Roberts in her cookbook called Gluten Free Baking Classics. Excellent book... but I will be buying the pie books you mentioned.....they looked just amazing.... Your kitchen looks beautiful and oh so cozy! For the question about the bottom crust not cooking - put the sheet pan or pizza stone or whatever in the oven while it's preheating , then when it's time to put the pie in, it gets a flash of heat right away at the bottom (I also find it easier to take the pie out of the oven that way).

We never worried about Pies, because Joan would make the best...I feel now I need to keep her honor going in our little family and learn how to make the pies. I love custard pies, cream pies and some fruit pies. I have a question about a nut pie crust. Have you ever made that type of "refrigerator pie" with a nutty crust? Jamie, I have an idea for your gift giving. Get pie pans from thrift stores or yard sales. They usually cost very little and you don’t have to worry about getting it back.

So the I remove the “egg booger” (love that name) when I make custard pies because they are creamy and if you leave it in there it gives your custard a little lump that I don’t like. Most people don’t bother to remove it but it bugs me, so I do. Thank you for all your kind words. It was a lot of fun sharing my tips and tricks and I am THRILLED to hear they were helpful. Howard - I’m glad you enjoyed the episode. It was a real hoot to make. I double checked it is 8T, 1/2 cup, 1/2 a crisco stick - all are equivalent but if you have a stick of crisco that is different stick with the 8Ts. Hope that helps?
This was so fun to watch! I’ve always done the pillsbury pie crusts but I think I’m going to try from scratch. When rolling out the crust can you use parchment instead of wax paper or wouldn’t it work? Happy Thanksgiving to all,!
I think you will find they are not that hard once you try. I would not substitute parchment for wax paper. The wax paper doesn’t stick to the dough when chilled. So slick! Good luck to you!

Hi Ladies! Here is a bit of superfluous information - The “white thing” on an egg yolk is called the Chalaza. There are two of them and I guess it’s kind of like a ligament in a human woman - it holds the yolk and kind of centers it so the yolk is not in one side or the other. So now you know. My trick for getting the pie out when I make pecan pie is one of two things, Line the bottom with parchment, or use the pie dish that resembles a tart pan, with a removable bottom!

Oh you’d be surprised how fun it can be to make a pie. It is made for sharing and you become everyone’s beat friend. It’s like having a bowl of love to share. I hope you give it a try.
I’m a retired Home Economics teacher-yeah some of us are still living. Be aware that the old cliche “As Easy as Pie” is true. I had a Mom who threw together a pie in less than 20 minutes; I learned early. I baked pies in a Mom and Pop bakery in college. I don’t call myself a Pie Goddess because it tells all those in fear of pie crust that you must be a goddess to make a pie. I bake differently than Jamie and that’s okay. Jamie’s pies look delicious! One more thought-according to my local Barista who won the international Barista Championship in Iceland (don’t remember the year). Coffee should not go in the freezer. I recommend an ‘Airscape’ ceramic container.

@@Cadyjaxknits gonna step in as a former barista and say I have heard that coffee should not go in and out and in and out of a freezer, but for long term storage it's okay. It has to do with the beans' oils and temperature fluctuations. I'm frankly impressed that the beans last long enough for you to bother storing them - a bag of beans lasts us a week, tops!
The coffee that goes in the freezer is the decaf. We only bring that out when we have guests and an after dinner dessert. Our daily coffee goes fast and is never frozen. Appreciate all the insight. Who knew?? It really does seem to hold up well.

This was great, I can’t believe you mentioned grasshopper pie. That was our wedding dessert 39 years ago! My mother-in-law and her girlfriends made pans and pans of it😊. Really enjoyed your detailed pie crust show and tell. I learned some great tips💕
Ah yes the grasshopper pie. What a fun treat for your wedding. I bet they had fun making them all. It was hands down my favorite until I realized it was mostly marshmallows and cream. That’s one pie I wish I hadn’t “seen under the hood” - took the magic away for me. It still reminds me of my grandma Rosie at Christmas.

Just as I see my knitting as an act of intentional practice, it's very clear to me that your pie baking is also a practice which invites in love, intention, craft and care. I was astonished to see your process for making your pie crust - I had always made pastry into a ball before chilling, but yours looks much better than mine has ever turned out! Also, we don't really have a tradition of pie baking here in Scotland, and with my own gluten issues, I must admit to not having made a pie for a very long time. But I was greatly encouraged when you said that the Pie Camp book had some gf recipes, and so now I'm just back from the shops having picked up a new ceramic pie dish. I just love pumpkin pie - again, not something we have a tradition of over here. I'm going to see if I can make a gf version. Wish me luck!

In my family, we have made fudgy pecan pie every year at Thanksgiving, along with pumpkin. The recipe is in the Hersey's Cocoa cookbook. The pie is like a fudgy pecan brownie in a crust. So good. I highly recommend.

Amazing pies!! I am just drooling over them!! I will say that if you do Gluten free.... you must measure exactly..... how I do miss having the regular delicious pie crusts but have a good gluten free one that I did find through the King Arther Company website. It’s by Annalise G. Roberts in her cookbook called Gluten Free Baking Classics. Excellent book... but I will be buying the pie books you mentioned.....they looked just amazing.... Jamie I can definitely see why you are a pie goddess!!! Have a wonderful Thanksgiving......thank you for showing us all your tips and all the love you put into your baking..... it totally shows!!!!

For the question about the bottom crust not cooking - put the sheet pan or pizza stone or whatever in the oven while it's preheating , then when it's time to put the pie in, it gets a flash of heat right away at the bottom (I also find it easier to take the pie out of the oven that way).

Darling sisters. Not to put a downer to this lovely podcast (I watched and took notes), but we lost our sister in 2019 and she was our "Pie Maker". We never worried about Pies, because Joan would make the best...I feel now I need to keep her honor going in our little family and learn how to make the pies. I love custard pies, cream pies and some fruit pies. I have a question about a nut pie crust. Have you ever made that type of "refrigerator pie" with a nutty crust? My cousin taught me that with serving dishes like casseroles and cookie plates. I keep a few on hand and when they are used up I get a few more.

So the I remove the “egg booger” (love that name) when I make custard pies because they are creamy and if you leave it in there it gives your custard a little lump that I don’t like. Most people don’t bother to remove it but it bugs me, so I do. Thank you for all your kind words. It was a lot of fun sharing my tips and tricks and I am THRILLED to hear they were helpful. Howard - I’m glad you enjoyed the episode. It was a real hoot to make. I double checked it is 8T, 1/2 cup, 1/2 a crisco stick - all are equivalent but if you have a stick of crisco that is different stick with the 8Ts. Hope that helps?

This was so fun to watch! I’ve always done the pillsbury pie crusts but I think I’m going to try from scratch. When rolling out the crust can you use parchment instead of wax paper or wouldn’t it work? Happy Thanksgiving to all,!
I think you will find they are not that hard once you try. I would not substitute parchment for wax paper. The wax paper doesn’t stick to the dough when chilled. So slick! Good luck to you!

Hi Ladies! Here is a bit of superfluous information - The “white thing” on an egg yolk is called the Chalaza. There are two of them and I guess it’s kind of like a ligament in a human woman - it holds the yolk and kind of centers it so the yolk is not in one side or the other. So now you know.
