Also they are probably covered by lots of tattoos, drinking craft beer and calling each other dude, or brah, or bro, etc., and have watched every Aaron Franklin video on RUclips, trying to get the secret. Im sure it's good stuff though. Hell Ive sold all my reverse flow, gravity feed, pellet grill, Komodo ceramic and ugly drum smokers because I cant get good BBQ if it doesnt come from a 10,000 gallon offset pit with a 5000 gallon smoke box and 2000 sticks of post oak wood.. Oh yeah, the other day I added paprika, sugar and some herbs to my rub and the Kosher Salt and 16 mesh pepper kicked the shit outta them and sent them packing. But now Ive seen the light. I'll do better, I promise.
Pork steaks over coals and mopped is one of the absolute best bites in bbq. So glad to see old school central Texas bbq still being done
