Noticed you smartly included baking soda with salt/pepper. This is an important ingredient in tenderizing tougher cuts of meat. I did a crock pot stew recipe a couple of days ago but first soaked the stew meat in water and baking soda for 15 minutes, drained and washed the meat to get soda residue off then patted the meat dry. I couldn’t believe how quickly the meat became tender. I wish I had known that years ago.

I found this channel because I moved from San Diego to NY and couldn't find good Mexican cuisine here, so I took it into my own hands. I bought a wok because of this video and it's upped my skills so much (exponentially 😁). Even when I make skirt streak for tacos, I use the wok now. The thin strips of meat flash cooked in a wok is where it's at. Then you can drop your tortillas into the remaining grease for that extra flavor. The corn starch for velveting the meat too, I learned that from this video. Not even a Chinese food channel, but I got it from here. That's what's up!
Claudia, my question is off the topic of take out food. Would you please do a video explaining the various Mexican cheeses and chilies you use. Some of us weren’t fortunate enough to have been taught these things. Thanks! You’re awesome!

The ginger and sesame oil take it to another level but for me, making it without sliced carrot is a sin! And instead of red flakes I add a spoonful of LAOGANMA spicy chili crisp easily found at Walmart. Nice job slicing the onion lengthwise Claudia, that’s how I do it. Love you girl ❤
