The railroad is all over the us so, that’s how you get a Chinese restaurant in every place. They then created a Chinese network of info on what works and what Americans like to succeed. Has anybody heard of Brandy Fried Chicken outside of Sacramento. I grew up in Sacramento and used to get brandy fried chicken all over town, When I moved away 20 years ago I couldn't find it anywhere. I eventually went looking for it online. All mention led to Frank Fat's in Sacramento. There was one mention in Monterey (interestingly where I was living at the time) for brandy fried chicken wings, so I went and tried them, and they were nowhere near as good as what I was used to, I could not find mention of it anywhere else. Curious if anyone anywhere else is familiar with it. It seems strange as you could get it at almost every Chinese restaurant in Sacramento, you could even get it at the Chinese food counter in supermarkets.
Baked Char Siu Baos were another thing I have only seen in Sacramento. The were baked to appeal to American tastes, and you could find them all over town. I was surprised to find them to not be common elsewhere. I can only find steamed Baos.
Wow that must have been an exclusive Sacramento dish, since I live SF and never heard of it. I have had baked char siu baos though in SF. One place makes it in cupcake pans so there was a meat in the cup part and a big domelike top. Sometimes different chefs make thing their own way and when they retire the recipe’s gone. I had amazing Mongolian beer from this one place that used cabbage instead of scallions and whole dried red chili pods, it was everyone’s fave dish but the restaurant was sold to someone else and that was gone for ever.
In the UK we have Chow Mein on the menu but i don't recall ever seeing Lo Mein - so what's the actual difference as they both looked like the same thing?
Many of the Chinese food in America that does not exist in China do exist in the Philippines (beef brocoli, chopsuey, egg rolls, Chowmien noodles cooked in American style, orange chicken....etc.)

I grew up eating Chinese American food living in San Diego, CA, and I definitely love it. My favorites growing up have been all the fried rice & low mein dishes, kung pao chicken, Mongolian beef, salt & pepper chicken wings and walnut shrimp. And of course orange chicken! ❤
my dad owned two restueants in San Rafael Santa rosa Brings back memories. preperation and the pots and pans are the most important, I used the wok very little , I prefer hibachi grill . But Lucas is the best

in some Latin countries: pegao or concon or in my mom's country, they call it cocolon. (the crispy rice stuck on the clay pot or bottom of your rice pot)
I love the Mapo Tofu...everything looks delicious! It's nice to eat Canadian/Chinese food once in awhile...we call ourselves CBC's in Canada...Canadian Born Chinese. 👍🇨🇦😉 It's all similar...American or Canadian/Chinese food. 😊

Nice to hear different perspectives. 😀 As for my favorite Chinese American dish....it'd have to be Garlic Chicken, with the chicken being battered with a nice 'slightly' sweet sauce. 😋 After that...it'd be General Tso's. Of course I always love a good Pork Chow Mein with lots of bean sprouts. I loooove Bean Sprouts! One thing from childhood I don't see anymore are Shrimp Chips. Those were soooo good. On occasions we would get “The Whitaker Special”!!!! Shrimp Egg Foo Young Pepper Steak Shrimp Fried Rice After all these years it’s still my fav meal! 🥰 Unfortunately I have to go to 3 different places to get it. One place makes great egg foo young but not good fried rice etc…. In fact I search for the fried rice if my childhood but I rarely find it. Surprisingly, the fried rice is the hardest to find. I don’t know how to make it and I’m not Chinese but … I LOVE Chinese food and I know what it’s supposed to taste like! Traditional American style Chinese fried rice has egg in it! It DOES NOT have peas and carrots! It DOES NOT have yellow rice! It DOES NOT have curry flavor! It does have bean sprouts, scallions, white rice and big, sweet fresh shrimp! ☺️ If you can help be find this food I would be eternally grateful! 😃 Thank you

American Chinese food will never die as long as hoods exist. Hoods across the USA are major supporters of American Chinese food, whether that’s a good thing or not.
Growing up Chinese American I always hated on Panda Express even though I never had it. I thought that Chinese food made by an American company is not authentic. It wasn't until I learned the history of Panda Express and actually ate there that I realized I judged them too soon. Panda taste as good as some "authentic" dishes.

Almond Boneless Chicken is my favorite. I’m from Detroit, so that dish is more of a Michigan and maybe Ohio staple. How can you not love fried chicken smothered in gravy?
More places need to serve there sauces separately to the fried foods! I've got to the point where I'll order crispy salt chilli chicken and a seperate sauce because it's guaranteed to have the crisp I desire ahaha. I took the risk last week of getting crispy in OK sauce and the batter was like glue.
Didnt know chinese american restaurants were closing!! Its sad. I think maybe they overall just need a refreshing update like this chef is giving it. People are generally looking for fresher ingredients and less grease in their food.
my fave, ABSOLUTE FAVEEEEE chinese-american/british dish is sweet and sour chicken balls! funnily enough I lived in Asia for a few years and they didn't have it xD Chinese takeaway is legit one of the pros of living in England :D it reminds me of my upbringing (takeaway life) and is just yummy. for my mom it's too yit hei but for a British Born Chinese like me, it represents me pretty well haha xD non traditional chinese food for a non traditional chinese person xD
American Chinese rocks! Lo Mein. Dumpling, pot stickers, sometimes Gyoza (yes I've eaten Gyoza at a Chinese restaurant). Won ton soup, Hot and sour soup. Beef and broccoli. Garlic anything, Pork and mushrooms. I have a seafood intolerance so no Happy Family.

Not 100% sure, but I think in American Chinese cuisine, lo mein is thicker and has a more dense and starchy/floury texture

More places need to serve there sauces separately to the fried foods! I've got to the point where I'll order crispy salt chilli chicken and a seperate sauce because it's guaranteed to have the crisp I desire ahaha. I took the risk last week of getting crispy in OK sauce and the batter was like glue.

Didnt know chinese american restaurants were closing!! Its sad. I think maybe they overall just need a refreshing update like this chef is giving it. People are generally looking for fresher ingredients and less grease in their food.

my fave, ABSOLUTE FAVEEEEE chinese-american/british dish is sweet and sour chicken balls! funnily enough I lived in Asia for a few years and they didn't have it xD Chinese takeaway is legit one of the pros of living in England :D

American Chinese rocks! Lo Mein. Dumpling, pot stickers, sometimes Gyoza (yes I've eaten Gyoza at a Chinese restaurant). Won ton soup, Hot and sour soup. Beef and broccoli. Garlic anything, Pork and mushrooms. I have a seafood intolerance so no Happy Family.
