Okay I made these, it worked, I made only with orange juice, little sugar for taste and orange essense, with China grass (agar agar grass) they didn't have those thin layer effect and juicy inside when they pop! These were more like fruit pearls , still fun! Will try it again with powdered agar agar and see if it makes a difference!
If you want them to burst them you have to make them with sodium alginate and calcium chloride. They are available on Amazon.

A squeeze bottle would be much easier.

Hi, yes you can just try to put them in an apple juice and in cool place.For example when you arrive place them in the fridge before serving them 🙂

You can use it but not in this recipe as you need to change the amount of the gelatin because agar agar is stronger than animal gelatine and the method will be different too. Sorry

yep, did it with orange juice today. you might have to add some more agar agar for more acidic fruits though, I needed more. Usually says so on the package as well. Have fun!

Nah. More like a wet, juicy bead. Using more advanced chemicals can create a light film encasing the liquid. This is like jello. Soft light and juicy jello.

Since agar agar and gelatine both work on heat and not acid I would think that you could. I'm no expert though... do remember that agar and gelatine need to be used in a different ratio (I think 3 grams gelatine is 1 gram agar?) So don't forget to calculate that!
Let me know if you've tried it!!
Oh, do remember agar sets at a higher temperature than gelatine, so you have to make sure the oil is really cold!

if you want a liquid try spherification its harder but gets what you want

bc water doesnt mix w oil, using oil will help retain the shape of a sphere droplet

This is strawberry and mango pearls already, use sodium alginate and calcium lactate if you want to make synthetic caviar

Aggar has a point of 60 C to become solid... it's not about this being vegan. But the difference between temperature. Gelantine gets hard at 24 or something and has a 8 hour proces to get proper hard. Soooooooooo

There is no way you are washing off the OIL slime with Water
oil floats on water. just soak them in cold water.

I noticed an amazing lack of straining on the mango side. I also noticed your oil wasn't cold enough.
It is better to use grape seed oil not veggi as it has no tast
