Making Beef Stroganoff

  • My version of this classic dish comes together easily and is a perfect comfort food meal. Serve over buttered noodles and you have a crowd pleaser!
    1 1/2 pounds sirloin steak
    2 TBSP olive oil
    Salt and pepper
    2 TBSP butter
    1 cup finely diced onion
    8oz sliced mushrooms
    1 cup beef stock
    1 tsp Worcestershire sauce
    1 tsp paprika
    1 bag (12oz) egg noodles
    8oz sour cream
    pinch of nutmeg
    1 cup panko bread crumbs
    2 TBSP butter
    Put the sirloin steak in the freezer for 45-60 minutes. This will help firm the meat and make it easier to slice. Cut steak against the grain in thin strips that are 3-4 inches long and 1/4 inch thick.
    Using a large skillet (12 inch) or an electric skillet, add 2 TBSP olive oil and cook steak over medium heat. After adding steak to pan, season with salt and pepper. You may need to do this in two batches. Transfer cooked steak to a plate and cover with foil to keep warm. Remove fat from skillet and and add butter. Once butter is melted, add onion and saute until soft, 4-5 minutes. Add mushrooms to skillet and season with salt and pepper. Cook until mushrooms are tender, another 4-5 minutes.
    Add beef stock, Worcestershire sauce and paprika to skillet. Simmer, covered, for 10-15 minutes.
    Start to prepare your egg noodles as directed on package.
    Remove skillet from heat. Add nutmeg (just a pinch) and add sour cream and stir in until dissolved. Add the beef back into the skillet and stir together with sauce. Over a very low heat, allow to meat to warm through for about 5 minutes.
    In a dry skillet, add panko bread crumbs. Toast crumbs over a medium high heat. Keep an eye on them - they can burn quickly. Once they start turning golden brown, add 2 TBSP butter and allow to melt, mixing butter in with the bread crumbs. They will continue to toast. Remove from heat.
    After draining you noodles, add buttered bread crumbs on top and toss in. Serve noodles on plate topped with a generous helping of the Beef Stroganoff. Enjoy!

    You both did a phenomenal job on your recipe! I'm with Ralph on adding some wine and my wife says I don't want wine flavor. Either way, the addition of sour cream, both of your interactions, and that beautiful 1950's oven makes the video extraordinary!

    Great to see you all back on the air! I have been excited to see the new kitchen in action, and it is fantastic to see how quickly you have become comfortable in your perfectly arranged and equipped vintage kitchen. I must say, however, that in this episode I really missed Ralph's musical contribution that he has always been so good at providing for our listening pleasure while Kevin cooks. I hope that Ralph was able to bring some of his vinyl along to this location, along with a vintage turntable to spin the hits on! The three of you certainly complement one another, and Mary Ann is a pro with the new camera already! Can't wait for the next episode!

      Hi amflashback! Thanks so much - we are glad to be back in action! Getting the music set up is the last piece we have to figure out. The new space is very different and we are trying to figure out where to put the hi-fi and volume levels, etc. The record collection has been moved into the new space so Ralph has a lot to choose from!     Love new kitchen. If tips are allowed, tell Ralph red wine never goes in stroganoff as it turns pink with the sour cream, so use white wine only. The sauce thickens a bit if you lightly dredge meat in flour before frying. Otherwise, good. Glad to see you back.

    Hello Kevin and Ralph! WOW, I just love watching you guys cook! I am so happy to see you in your new kitchen studio. Your channel is so warm and welcoming-true Americana at it's best. Your channel is also very ASMR to me, and I'm sure to others who watch! I like to hear your banter while Kevin cooks. Everything about your channel is so much like it was in my days of growing up-of childhood. Thank you both so much for just being yourselves and allowing me to relive my youth in your world of our childhood memories. God Bless. :-) Kevin, I really like your haircut ! Do you guys remember the electric cook stoves with a deep-well cooker in them? I do. PS: It's a rainy night in Georgia-and very cold!

      Hi Princess Skate - thanks so much for your very nice note! So glad you enjoy what we are doing - it's a lot of fun for us, too! I think part of what inspires me is a desire to also reach back to my younger days, to a time when people talked more in person, sat down and shared meals, and weren't looking into a screen all the time. I have some stoves with the "deep well" cookers in them and will eventually get one in rotation in the new kitchen and we will use it! Hope the warmth is on its way to Georgia...I think we are going to have to wait a while before it makes its way to Michigan! Thanks again!!

    Buttered bread crumbs!!!! My Mom put buttered breadcrumbs on just about everything! So yummy! Your stove is gorgeous.....and I am still in awe of all the amazing appliances you have on the shelves...and everything is so shiny. I love stroganoff and I often make it with ground beef to make it a little cheaper. So happy to see you all back!

    Awesome video & I love your new kitchen!
    The corner windows are so 1950's . If they're real & your kitchen came with those windows, you're lucky.......if you put them there as part of your decorating/staging, then you're brilliant!!

      Thanks so much, ProfoundConfusion! When I was laying out the kitchen, all the plumbing was in that corner, so it made the most sense to put the sink there and I had found that corner sink years ago at a salvage sale. The walls behind the kitchen are solid brick! Seems like you just have to have a window over the sink - so I made faux windows with a place to slide photos in and out of the top. I call them my "Windows on Croswell" and I take shots from around town to drop in...the next best thing to real windows! Thanks again!

    One of my favorite childhood meals! Mom made this for a family of 6 people & 2 Golden retrievers, & we all ate well. Always made a big batch. This recipe stretches really quite well thanks to the noodles. Was a welcomed hot meal during the winter time in Louisiana.

    Ooooh yeah, back at it! A great recipe to begin in your new kitchen. I make this as well, however a few days after Christmas when I finally had a chance to get to it, I cubed up the slice of standing rib roast from Christmas dinner and used that to begin as the base for just this dish. The gravy was beef chicken stock thickened with a white gravy, adding the sour cream, mushrooms etc. Twas delish if I say so myself.
    Needless to say, starting off with this dish was appropriate. :-)
    Glad to have y'all back in the kitchen and the set is wonderful and looks to be lovely to cook in and can handle multiple bodies if need be.
    Will be looking forward to seeing what you scare up next in there!

    Everything looks wonderful! Great work. Everything was perfect on that beef stroganoff! I do believe Grandma roll over in her grave. She passed away in December. But she would have liked everything but the nutmeg if you don't have noodles we always serve stroganoff over rice

    I have been waiting for this for...well over a year actually! So clear and so crisp visually. I was a little afraid that the new videos would come out somewhat sterile being that you are now using more artificial lighting... but the results are wonderful! Maybe putting some kind of artificial back lighting in the corner window might add a little warmth to give it the illusion of daylight. Just a thought.
    The only thing is, as was stated in another comment... you need to get the stereo hooked up to play some of your vintage records!! I need some Johnny Desmond or classic Polish polkas!!
    I hope you maybe do some golabki (cabbage rolls), or even German spaetzle with a slow roasted sauerbraten sometime in the future!! Okay...I'll shut up now!!!!

      Hi Greg - thanks so much! The new studio is a work in progress. We will get the music going once we figure out the best placement for the hi-fi, volume, etc. I'm planning on including some Polish recipes in the future..would love to make some golabki! Thanks for watching!

    Hooray from your fans in Palm Springs. Love the fridge, is it a GE? We had that model in our playroom if it is. We now have a 1955-56 GE with turn out shelves, butter conditioner etc. in our mid century home, using it as a liquor cabinet.
