Ingredients for 4 persons:
0,7lb/320g of spaghetti.
1,5lb/700g of tomato puree.
16 cherry tomatoes.
Garlic.
Basil.
Chilli pepper.
Extra virgin olive oil.
Salt.
Black pepper.
Method:
Cut the cherry tomatoes in half. Season with oil, salt and toast in a pan.
Sauté oil, garlic and chili pepper. Add the tomato puree, basil, salt, pepper, a little water and cook for 10 minutes.
Cook the spaghetti in plenty of salted water. Halfway through cooking, drain the pasta in the pan and finish cooking with the cooking water. Stir with the toasted cherry tomatoes, oil and cooking water.
Serve with plenty of sauce, toasted cherry tomatoes and fresh basil.

I tell my family, one of the secrets to great pasta is the slowly dried semolina pasta and pasta water. They don't understand that simple ingredients, with the freshest and seasonal ingredients, is the difference between great pasta and dog food. EAT!!!! Still looking for good fresh tomatoes.

Hi Craig and go Gators! Ingredients are the basis for a good dish! For first courses, pasta is fundamental! It isn't necessary to spend $20 per kg, but there's truly a gulf between a poor quality pasta and a good quality industrial one! I make my own tomatoes, like chillies and herbs! Out of season I'm lucky enough to find them quite easily! ❤️🤗
