腰果雞丁How to make: Chicken with Cashew Nuts : Sit Fry: Authentic Chinese Cooking

- Retired Chef Fai, teach you how to make this, well known, favorite food that ordered by american dinner in an authentic chinese restaurant. Now, you can make this at home, and your love one & friends will like and enjoy this feast.
Below are the list of those ingredients. Thru the courtesy of Elise Xuereb, who also helps us type those list & create list of procedure. So, we can COPY-PASTE-PRINT the same.
Ingredients:
1 pound Boneless Chicken Thighs (cubed)
4 oz. pre - toasted and unsalted Cashew Nuts
1 tablespoon Minced Ginger
1 tablespoon Minced Garlic
1/2 of a Red Bell Pepper (diced)
1/4 Yellow Onion (diced)
2 stalks Celery
1 teaspoon cooking Rice Wine
2 tablespoons Light Soy Sauce for meat and 1 tablespoon for pre-mix sauce
1 teaspoon Sesame Oil for meat and 1 teaspoon for pre-mix sauce
Cooking oil (as needed)
1 teaspoon Sugar
1/4 cup Chicken Stock
1 pinch of White Pepper
1 teaspoon Corn Starch
Method:
1.Marinate: Add Rice Wine, Soy sauce and sesame oil to the chicken and mix.
2.Add corn starch to the mix and set aside for 30 minutes.
3.Make Pre-Mix: Sugar, Chicken Stock, soy sauce, sesame oil and white pepper.
4.Stir cashew nuts in a pan with the cooking oil.
5.Remove from pan and set aside.
6.Add 3 tablespoons of cooking oil.
7.Stir fry half of the ginger and garlic until fragrant.
8.Add 1/3 of our marinated meat.
9.Stir fry for 5-6 minutes until cooked.
10.Remove when cooked and stir fry the rest and set aside.
11.Add 2 tablespoons of cooking oil to the pan.
12.Stir fry the remaining ginger and garlic.
13.Add all vegetables: Red bell pepper, yellow onions and celery.
14.Stir fry for 5 minutes, then put the cooked chicken with the vegetable mix.
15.Add the Pre-mix sauce done in Step 3.
16.Add cashew nuts.
17.Add to serving plate

I made this last night for dinner along with some of your other dishes, and despite the fact that my sesame oil somehow vanished (had to use olive oil) and I over toasted the cashews (half blackened) it was still absolutely delicious and I am having the left overs for lunch. @@HAPPYWOK Yes sir, i am your big russian fan (with love). Lol. It is strange but there are in Russia you can easily get any PRB sauce (char siu, chouhou, lantern etc.) but it is almost impossible to get green szechuan peppercorns or fermented tofu, even via Internet. I also love Korean cousine, it is so awesome and hot.

I just made this! I subbed mushrooms in place of the onions because I didn't have any. So easy and so so good. Breaking up the chicken into 3 cooking batches total eliminated the extra fluid issues.

This Chinese food happens to be my hubby's favorite . It happens to be very expensive as well because cashew is very expensive so I made it a point to learn how to cook it. Happy Wok by chef Fai is my go to or how to site. I want to make sure it taste like the way it is done in restaurant . So far no complaint from the the hubby. Thanks Chef. It is cheaper to do it and more food for the money. More left over for next day. Easy to make with your method.

I'm loving your recipies and especially the correct techniques you demonstrate. The only problem I had with cooking Chinese food at home in the UK was that the gas flame is not really powerful enough, especially for stir fry. If, like me, you don't have a propper wok burner, which looks and sounds like an F15 in full afterburn, I've overcome this by using two woks on full heat and transferring the food from one to another every 30-40 seconds.
Great suggestion! Maybe later , you will find a better cooking stove for you cooking the chinese wok way. Thanks for watching.

Thanking you Chef for answering and explaining. I made this today for the first time. I was a little nervous,BUT it turned out just AMAZING. I felt so proud when my grown up son came and saw some left after our meal my husband and I and said Wow the house smells like a Chinese restaurant when you open the front door. Of course he went away with a bowl for himself for tonight and a bowl of hot white perfumed white rice too. THANK YOU SO MUCH. May i say that next time as they will be a next time for sure i shall make perhaps a little more of the prepared stock to add to make it a little more moist so that the rice has a little more sauce as my meat was 0,754grams. But it was WONDERFUL. . Blessings.

OK....I have eight of your dishes in my repertoire now, and lovin' it....nearly ready to open my restaurant now (Swaggies Genuine Aussie/Chinese Tucker). "Special of the Day - Ginger Kangaroo stir fry with Bush Pepper". Actually, that sounds pretty good, might have to try that. lol.
But seriously, would be great to see a video of knife skills if you can....de-boning, mincing, that sort of thing. While you're at it show your smiling face in the video!

msc D-A I used salted cashew nuts, for it is already season and yes, you can use mirin for rice wine substitute. some mirin are sweetened too. nit a big deal for the final taste. thanks for asking and thank you for watching.
Thanks chef,did it last night and love it.love your cooking.simple yet delicious.so glad I found your channel.only one question the cashew nuts I bought were raw and how to make it more like yours.i tried to put in microwave for 3mins but still not crispy or crunchy like yours.did not want to get those that are ready packed as it has too much salt in it.
place raw cashew nuts inside conventional oven, set at 250 F for 25 minutes. then cool it down to room temperature. that will make it crunchy. Thanks for asking.

+mdjj0514 You could try and use Japanese sake instead or Dry sherry.
+MrQuagmire26 ---- I been using rice cooking wine for 4 decade. almost all Chinese cook, uses this. sake and dry sherry , would be foreign language for them, thanks for suggesting.
HAPPY WOK Well, I also tend to use Shao Xing cooking wine. But They are both worthy alternatives. Dry sherry is definitely a westernised idea. But I have used it successfully for emergency in some cases.
Sake is also a rice wine used more in japan of course. But I did make tasty stir fries with it.
+MrQuagmire26 --- that is true. Sake & dry sherry can be substitute for rice wine. I only have regular rice cooking wine. Oh yes! I do have that shaoxing rice cooking wine too.
would be nice to see the procedure and recipe to print off. Tried to write it down as I watch video but to fast to get everything , but have subscribe had some in a restaurant I think it had sweet chili sauce in the recipe. Thank you
