I have made rhubarb wine 3 times now,,, it is surprisingly lovely,...., I used the red star yeast u used,,, it works well,, thank you for your advice !,, I managed to buy rhubarb stems which were very red. the wine has wonderful flavour and a deep pink colour!
I have 2 gallons of Strawberry rhubarb fermenting. 1 gallon is following your recipe. I think it is going to be excellent, it taste good at a young age. The other gallon is made from Strawberry Rhubarb jam. I have yet to taste it.
With rhubarb I found it easier to just lightly boil a gallon of chopped rhubarb in a few cups of water and strain it off and use the juice left in the pot to add to what ever your making works really well.
When done correctly Rhubarb wine is absolutely delicious! I only was drinking mine in 2 months time. It's what got me back into making wine again. I've got a batch of strawberry rhubarb and blueberry rhubard going right now and cannot wait until they are finished.
what you need to do with this batch is put it at the back of a cupboard and completely forget it's there for about 3 years. It will completely clear and the fruit flavours will blend and come through with a natural sweetness. You will have a fantastic , fruity , medium sweet wine. by experience, rhubarb is quite tart and kind of weird woody vegetal taste. when i was a kid we would eat the stalks in early summer. we would dip the tip of the stalk ina caster sugar or maple sugar to alleviate the edge.
When I was a kid, my dad grew rhubarb. At some point, my sister "accidentally" ran over it with the lawn mower. I was sorely disappointed -- that I hadn't thought of it first. Given that our tastes change as we age, I should go back and try it again.
@@DIYFermentation You're quite right , rhubarb alone is difficult to make a good wine with. It does , however , blend brilliantly with lots of other fruits. It can give that "edge" that some fruits lack.
My first attempt at making just rhubarb wine was a taste disaster, and that was a 3 gallon mistake 😞 I am going to try your recipe in a gallon batch. Wish me luck 🙏

Although the wine was very drinkable, I'm not yet convienced that rhubarb alone will make a good wine. A subject for another day.

Would a grader or a food processor make getting that juice a little easier?
