    Hi Dav, In Latin America they pound the steaks to tenderize them. Aging steaks in a controlled enviornment is a complicated Western European - UK - US tradition . That's why Latin American Beef has other methods. Tasajo (drying), and the long cooking and shredding.     I hope to try ceviche some day. Looks really good! I couldn't deal with all of that loud music all of the time though. It brings the stress level way up. I'd probably be off in the jungle hanging with all of the critters and the sounds of nature, like in most of your great videos.

    I was in the 3 towns, and had pounded flat beef in tabatinga, wasn't crazy, and flat unjuicy chicken in leticia, which was horrible, i mean, they jsut squeezed all the juice goodness out of the chicken, why? Hahaha, anyways, when i arrived to peru, the food was exceptional, i mean, in santa rosa it was great, in iquitos too. Peru has the best food scene in the region, there is no doubt, even peruvian restaurants in leticia were better than most colombian ones. I actually ate at that restaurant in tabatingua, but i had fish, it was good. Anyways, no hate, jsut expressing my love for peru food vs colombian and brazilian from my experience in my 10 days in the tres fronteras region, which is one of favorite regions in the world!     don't diss the Wichita, KS food scene. It is one of the unexpected positives of this city. We do have latin restaurants and an expanding asian resturant scene. plus lots of other hidden gems.

    It all looked good but lunch looked like the best meal of the day. Funny line about the tuk-tuk driver overcharging. All these little "side lines", bet you were the person in class that got people in trouble making them laugh.

    Latin American cuisine is so delicious. I wonder if they consider the hamburger a snack because it doesn't have side dishes like a full meal would, or it is something easier to grab and go than main dishes are.
