The higher the temp the better. I would actually cook higher if my oven was able to. Eventually I'll get a specialized pizza oven and really crank up the heat. Though if you don't have a baking stone or steel that can handle that high of temperature than you can cook it at a lower temp. It will take longer to cook and the dough may not be as fluffy but it will still be good.

I actually don't remember the dough I used back when this video was made. But here is the dough recipe I use now . 27g Warm water 1g Active Dry Yeast 90g Cold water 180g Bread flour 4g Sugar 4g Kosher salt 2g Olive oil First mix the warm water and yeast and let set for a minute to become active. Mix the flour and sugar then add the cold water. When the yeast is active combine with the flour mix until all the flour is fully incorporated. Then combine the salt and oil. Once everything is combined lay the dough on the counter and knead for several minutes. Form the dough into a ball and refrigerate covered for 24 hours. After 24 hours has passed take the dough out of the fridge and push out all the gas that has built up over time. Form the dough into a ball again, cover and refrigerate for another 24 hours. Take the dough out 1-2 hours before cooking.
Nice end grain cutting board. I make cutting boards so I'm hoping at some point in the 2 years since this video I hope that board got oiled. It's definitely dry and need some mineral oil

But here's the recipe I've been using recently for pizzas. 120 grams of warm water 2 grams of sugar 1 gram of active dry yeast Give the yeast a minute to become active in the water then mix with: 180 grams of all purpose flour 2 grams of kosher salt 5 grams of olive oil The dough will be extremely sticky but knead it until it can be rolled up and formed into a ball. I let it rise in a sealed container at room temperature for 4-6 hours. Then I move it into the fridge for a full day. I take the dough out, roll it into a ball, and leave covered on the counter 2.5 hours before I finally cook it. If you try it let me know how it turns out for you! I'm always experimenting with different dough recipes but this is the one I like to use in my videos right now.

I highly recommend it. Its so good. You can even customize it with some of your favorite veggie ingredients like tomatoes and peppers.
