- Hello everyone 😊, today I want to show you guys how to make this super easy, crispy and delicious Purple rice Coconut Sweet cake 椰汁紫米黑糖年糕,this cake only need to use a blender to blend everything together, so it is very simple but delicious and nutritious too 😋
It is because Black rice has a purple-black outer shell and is rich in vitamin B complex and minerals such as iron, magnesium, calcium, and potassium. It is an unrefined whole grain. Black rice contains higher amounts of anthocyanins and other antioxidant substances and dietary fiber than ordinary brown rice. And it is a low GI food with a GI value of about 58 (white rice is 87), making it a good choice for people with diabetes.

Purple rice Coconut Sweet cake recipe (serving size: One 9” x 6” x 2” pan
Ingredients
Glutinous rice flour 150g
Black glutinous rice 150g
water 8 oz
Coconut milk 8 oz
*Brown sugar 2 slabs
*Oil 1/4 cup (2 oz)
Instructions
1. Soak the black glutinous rice in water for 2 hours or more.
2. Use a blender to beat the black glutinous rice and soaking water into glutinous rice slurry.
3. Add coconut milk and mix well.
4. Add glutinous rice flour in small amounts three times and mix well.
5. Run the batter through the colander
6. Grease the baking pan with oil and distribute the rice cake batter evenly into the pan .
7. Steam over medium-high heat for 40 minutes.
8. After steaming, take out and let cool.
9. Place it in the refrigerator to chill overnight.
10. The next day, cut into pieces and fry until fragrant, then enjoy.
