  • Love ramen? Then try this quick and delicious homemade miso ramen with pork and chicken broth, top with chashu, ramen egg, and corn.
    For the complete recipe:

    Ingredients:
    2 large garlic cloves
    1 inch ginger
    1 shallot
    1 Tbsp. sesame seeds
    1 Tbsp. sesame oil
    ¼ lb (113 g) ground pork
    1 tsp. Chili Bean Sauce/Paste (La Doubanjiang)
    3 Tbsp. miso (I use awase miso)
    1 Tbsp. sugar
    1 Tbsp. sake
    4 cups (1 L) chicken stock/broth
    1 tsp. salt
    ¼ tsp. white pepper
    2 serving ramen noodles
    Ramen Topping Suggestions:
    Chashu
    Spicy Bean Sprout Salad
    Ramen Eggs
    Corn kernels
    Nori (seaweed)
    Chopped scallion/green onion
    Red pickled ginger (Kizami Shoga)
    Shiraga Negi (optional)
    La-yu (Japanese chili oil) (optional)

    This was alot of fun to make. Greetings from Finland! I'm a rookie when it comes to cooking, but I find it interesting to cook something different compared to the Finnish cuisine, and I've never done Japanese or eastern cuisine before. Don't really know the spesific reason why I wanted to make ramen, but I'm really glad that I found your recipe. I made some chashu and ramen eggs for toppings by your recipes also, then added some green onions and spinach(for some reason I forgot to use the nori I bought). The result didn't really look particularly similar but me and my parents enjoyed the result overall. I'll definately subscribe and check out your site for more deliciousness! Thank you.

    I made this (with ramen egg and chashu) for me and my boyfriend weeks ago and he still won't stop talking about how good it was! It's such a delicious recipe. It was my first time trying ramen and it made me want to try every kind of ramen I can!

    I'm dying to try Japanese Ramen when i was in Japan,as you know its normally base in Pork broth, I don't consume pork. I make this last night and change to chicken. OMG! I'm in love, my kids in love too. Thank you for the lovely, easy follow video.

    I didn't have some stuff and used some substitutes, as well as home-made chicken stock, and it ended up tasting almost like tonkotsu ramen, which is my favorite! Great recipe, will become one of my staples!

    I'm Brazilian and lived in Toyama-Ken during 4 years (2000~2004). I LOVE your culture and food, I miss so much the "ramen-ya", those traditional that we find everywhere and "8-ban" too. I try to eat Japanese food once a week but where I live is a bit expensive to keep the habit. When I can and when I found the correct ingredients, I risk myself to cook something for me and my husband. I'm glad to find your channel, now I can make more experiences! THANK YOU!     Hi Nami! I made this yesterday & today and it's surprisingly good, I have been to Japan so many times so I thought there is no way it would taste so good since I had authentic ramen a lot but you prove me wrong! My husband is from Sacramento and he had authentic-ish ramen there a lot and he loved it too ! We currently live in Italia and it's so hard for us to eat any type of Asian food ! You seriously saved our lives You rock !

It's one of the reasons why I haven't made Tonkotsu ramen... it takes hours and hours and I just don't see the point as a busy home cook... maybe one day. :D Thank you for your kind feedback!

    Made something similar to this. But I marinaded the pork in soy sauce, green onion and garlic but I did it over night and it was soooo good.

    I'd just cooked it and it was delicious!! I made also pork & shrimp meatballs from the remaining chop meat. My German husband loves this dish too.

    The recipe is easy and very well presented. I made your miso ramen and I must admit it was absolutely F-A-N-T-A-S-T-I-C! Love the idea with the ground pork sticking to the noodles. Every bite has a different taste! I will definitely go back to it in the future. Next I will try your Spicy Shoyu Ramen (And since I have frozen some of the chicken stock it won't be long)

    Made this last night and the wife was slurping her bowl asking for seconds. Only change I made was added a little mirin (2 tblsp) to the recipe and added some of the jous from the chashu pork braise.

    This looks awesome! I just started making my own ramen yesterday from a pretty complicated recipe, I liked it, but my daughter and her mom didn't.
    This looks like a much simpler concept and I think I'm going to try it. I'll have to improvise a little with what I got, BUT NOW I GET TO USE THE MISO!!! :) :) THANX !

      Home cook version is hard to beat the ramen restaurant soup that is cooked for hours or days. But... for a home cook version that takes only short time, I'm really proud of this recipe. Make sure to use all the ingredients I specify and no substitute because each ingredient contribute important flavor in the recipe. :) Hope you enjoy!

    Tried this recipe yesterday for our Chinese lunar reunion dinner. Had many praises from the family :) I used red miso though, so wondering if using awase miso will make the broth significantly different? Anyway, thanks for this amazing recipe. I tried it together with your ramen egg recipe as well as the bean sprout recipe. All came together so amazingly. Also, any popular Japanese ramen brand to recommend? :)

      Hi Sheryl! I'm so happy to hear you and your family enjoyed my recipes! Do experiment with different miso as each has slightly different flavor profile. Red miso works great, and even red miso, it varies from strong to mild. What do you mean by the Japanese ramen brand? The packaged noodles? I used Sun Noodles's fresh noodles. :)

    I'm a noob, just started cooking Japanese food. I am having trouble finding ramen noodles. I am so used to the "curly" noodles. I ordered "Ramen" noodles from a Japanese company and they are straight and thicker than the ones you see in the prepackaged ramens. Any idea where to get 'real' ramen noodles or are the one I purchased real ramen?
    I'm excited to try your recipes. I made a shoyu ramen already. Now for Miso... :)

    Most ramen shops simmer their soup broth the entire day. Can the same be done with this recipe? I've also seen recipes where they cook the miso paste separately and add it to the broth at the very end.

      ***** Today I made it 4th time; as always great ^^. I have another question; about rice. In my region often we cook to meals rice in a bag (barbarity xD!) in a lots of water and we salting more or less 1Tbsp per 1L water. My question: how is it in Japan? When You are cooking rice to breakfast/lunch, salting it? If so, how many?

    I eat my shrimp nissin cup noodles with a hard boiled egg.. fresh chopped green onions,dried red Chile peppers ,and a bunch of seaweed sheets mixed in 😎

      That will make it more like soba/udon type of noodle soup. For Ramen, it's best to use chicken/pork broth. You "can" but you have to have a different mindset to eat this ramen. :)

    I usually see Ramen served with Narutomaki. Would you put it in? Or just with normal Ramen?
