    Love the POV video like Kenji's style! I'd love to watch a series of yours with just POV workflow of making coffee with minimal talking, just like how Kenji does it. (although the preview discussion is fun, just a distinct style) I think that gives the viewer a much better understanding of what to do when brewing

    This video was super clutch, I'll have to test this method out with the Brazil Cup of Excellence #3 beans I just got from Bean & Bean. I really wanted to try a special recipe for such special beans, so this works perfect. I've been loving this channel lately, really wish I would have found it earlier. Keep up the great work man

    That coffee was so bomb... It had such a punchy flavor, rather than focusing on the outright notes, I couldn't get over that it tasted like rockstar coffee, so in your face and was very hard to pull astringency. I think I was at a 3.1 on an Ode v2 at the finest for v60, and still got great cups most of the time. Was drinking passenger Jose Salazar before this, this blew that away even if it's wasn't as outright clean.

    Update to my comment below. I did try this brewing method on the Ethiopian Yirgacheffe Natural Light roast, and wow, it did help and make a difference. The first time was over-extracted and pretty muddy bed (I also forgot to use the Cafec filter paper and the Hario paper resulted in over 6 minute brew. I added by-pass and still resulted in a real good cup compared to prior attempts. I remembered the Cafec papers for the second try, and skipped the agitation after 3rd pour (did the swirl and tap). Wow, the cup was very good. Thank you so much for sharing this and am now enjoying this coffee. Was excited to give a report on it.

      yeah I mean... many youtubers suggest to "Oppenheim" that filter but I never get good coffee like that, the agitation given by pouring water is enough for me.

    Swirling or any agitation along the sides allows the micro fines to clog the pours typically adding more bitterness if done in excess. This paper flows faster than some so it’s may be more forgiving but in general this practice can lead to a harsher cups. Tapping the dripper in the end is a technique for slowing the brew down.

    I've found that agitation tends to give the brew more body at the cost of clarity and structure. I tend to prefer distinction between a coffee's characteristics rather than a more homogenized/full bodied brew.

    what do you think of James Hoffman's 5 pour? I like both philosophies but I find myself daily driving a 5-pour more than a 3-pour with high agitation most of the time because I feel like it gives me more balance? I don't have a refractometer so I really can't compare the extractions but both methods give me good extraction I mostly drink onyx single origins.

    Hello Brian, what is your water for this coffee ? My basic recipe for this kind of coffee is something like 20 GH (10 Mg/10Ca) and 10 KH (10KHCO3). Did you have any tips ? :)

      For this coffee I am using my tap water which is ~25ppm 8gh/15kh!

    what if your coffee was a high-altitude washed Ethiopian?! high agitation with those kind of coffee means guaranteed stalling

    I had that coffe in the last sub, reallllly good. Also, use basically same brewing technique but with a 2 pour, 2 min bloom. You got a link for the leaf wdt tool?

    Would you say why you prefer the cafec medium to their light roast filters?

      Cafec Medium flows very fast while Light flows very slow and provides a much more immersion style brew. It works great with light roast coffees but you need coffees like SEY/Flower Child as you're gonna end up with 7-10 min brew (and at that point I'd just brew immersion)

    I will be getting Pepe Jijon coffee from September Coffee and will try it with your method. I will also try this on an Ethiopian Yirgacheffe Natural, Light roast that I had a very hard time brewing, It would come out more tea-like and would barely detect any notes, if any at all no matter how it was brewed, but did not try the more aggressive approach. Will do so. (If you have any other tips for the later, would greatly appreciate).

    I really liked this video and your excitement- but as someone who works in precision weighing scales, please do this wild tap off after setting the Server off the scale, you are hurting it 😉

    I had this coffee and it tasted like a natural processed which I’m not a fan of. Agree with you on everything else Sey though!
    BTW how long did you let it rest?

    Does a muddy bed indicate error?

      No. You want to push all the fines up and they will be at the top so visually the bed may not look the best, or at least with these T90's if you see a lot of muddiness trapped in the corners that means you are doing it correctly because the paper filter is trapping all of the fines!

    Didn't get great results with a KPlus (7.0 clicks) and Sey. Lots of bitterness in the cup and it tasted very astringent. I think there is a limit to how much you should agitate this to be honest. .. especially the tap at the end.

    Honestly, I’ve been getting pretty shit results lately. I have SSP Cast on an Ode, one click away from chirp, and I usually grind in the 4-5 range. Almost always use SEY beans the last several months. T-90 filters are my goto. I agitate with a chopstick and swirl fairly aggressively. I’ve been using 1:16, so maybe that’s the problem? Otherwise, my setup is very similar to yours.
