My little brother Sam was in town and Brook and I got to take him fishing offshore. We went out of Hillsoboro inlet, FL and tried to catch a kingfish, sailfish or wahoo. On the way home we hooked into a giant kingfish over the reef. We were slow trolling live goggle eye for bait. Sam and I made smoked the fish on the camp chef woodwind pellet grill. We made the fish into smoked fish dip.

Vic, you are a class act! Love how you interact with your little brother! I hope one day to get my son on a king. I have a 20 yr old with Autism and he loves fishing but never been on a boat. I worry about taking a charter since it costs a lot and not sure how he would handle it. Definitely can't do a party boat with him since it is cheaper but him not enjoying it and not able to get the boat turned around would be a nightmare. He is high functioning but I have only fished from shore with him due to that. My only hope is to one day purchase a boat or have someone bring us that doesn't mind turning around if things go south. It's a struggle for sure. Just happy I got him on his first permit, pompano, sheepshead, black drum, trout, redfish and snook. So he is still a happy camper!

I love king fish smoked grilled and fried me and my daughter got 3 down in the gulf off Texas when we did some trolling about a mile off shore on my boat was her first time but I have had many times and always loved it.

As an Alaskan I am still waiting for the day that I get tired of smoked fish. Pro tip, when smoking fish, you can impress other fish smokers by using the word pellicle to describe the crust that forms on the outside of the meat that is being smoked. You know you are a master smoker/ canner when your pellicle game is such that your smoked fish does not turn to mush when canning.
How long will that dip keep for? I think it's awesome taking the lil bro out and making it the best day for him. Keep up the great vids.
