Yes indeed, shortening & butter works. In fact, the only times I’ve had success with pie crusts was using both. I really enjoyed watching this thorough explanation. It’s really an excellent culinary Education. One criticism however, while background music may be nice with some videos, the one chosen here was rather distracting & annoying. Perhaps some nice classical music that’s not quite as loud as the Chef’s Own Voice? But thanks very much I really enjoyed having this technique with Butter & Shortening validated. 🙏🏼

Chef, do you like to use a cream cheese, butter, and flour pie crust? I've really enjoyed this crust lately, and it's far less temperamental. Your opinion, please.
@@simple.and.delicious.recipes well I need extra water and when I took dough out of the fridge I had to wait about 15 min I order to roll out without cracking🙂other then that it was good🙂
My problem is after the dough has been made and refridgerated..... rolling it out is too difficult for me. How long do I wait, after I have removed it from the fridge, before I can roll it out? Sometimes I roll it out first, put the bottom crust into the pie plate, cover it up with plastic, and the refrigerate it. Ideas? Thank you.
Let the dough chill for an hour or over night in the freezer or fridge I prefer freezer, and when ready to use let it defrost a bit 20-30 min and get flour and put on the bottom of the dough before you start to roll so it won't stick..
food processors are quicker, but as I tell my culinary students, make it first by hand to appreciate the use of machines, I like the feel of the dough in my hands. However when I need to make quantities of dough I do not hesitate to use machines. Thank you for your comments and for viewing our RUclips Channel.
