I hate to break it to some of you ignorant "foodies" out there, but I can promise you that most any restaurant, bakery, food service establishment out there does NOT enforce their staff to wear gloves. Yes, gloves can be found around the kitchen, but are hardly ever used by staff.....unless...the wonderful people from the health department are making a visit, or the general public can visibility see their food being prepared in front of them. Ask any chef, line cook, prep cook, baker, server, etc...and they know what I'm talking about. If people really saw what happens behind the scenes in food service no one would want to eat out again. Check out Kitchen Nightmares with Gordon Ramsey or Bar Rescue with Jon Taffer.... believe it people! And for those who are baffled by the brush being used to flatten the pastry....it's HOT in kitchens and bakeries! And phyllo dough is very fragile. The heat from your hands also has an adverse effect on the tissue thin quality of the dough. Plus kitchen tools and equipment aren't cheap, if you have basic tools that serve multiple purposes then financially it makes sense to make use of what you have. Don't be a food snob if you've not worked in the food service or hospitality industries.
Those people who complain about a pastry or pasta maker not wearing gloves are just living in a bubble. These things require that you grab them with your bare hands. All they need to do is have them very clean.
Sorry guys for this but actually its not real baklava and this place is very tirdy.. all turkish peoples say this in comments. I think they are angry about this... Actually real baklava is more different and restaurants are more and really clean in Turkey. Please dont think bad about our foods..thanks for reading 🙇♀️

You must have not watched the whole video because he chops up but he cut earlier into a fine chop and sprinkles it all over the dough before rolling it
@@ellen7135 I guess you aren't much in The Culinary line. Pastry brush. Bench brush. Basting brush. Then there's that good old barbecue mop brush. I suggest you don't eat out anywhere. Those brushes are everywhere. Scary. Alarming.

Только мужчинам и работать.я готовила по русскому рецепту. Измененному. Там и как бы безе между прослойками. Орех,мед. Сын из Турции привозит коробками. С нашими не сравнить.
