It’s true. Most pop songs and country songs use the magic four chords. However I will say that if you go and try to learn more complicated songs of his, you’ll find that there are a lot more than just those four chords. Either way, he has some serious talent and deserves everything he’s achieved.
To put it bluntly, it's not about the chords, but about the progression (order, if you may, but that's quite likely to change as you change the song) of them, associated with the melody you're singing. Of course, the chords you can use, their order and the notes you hit while singing, will always changing according with the tone of your choice. As Ed Sheeran chose G major, the chords, to put it VERY simply, are G, Em, C and D. Just transpose music as you choose the best tone for you to sing and voilá, you can roughly play and sing any song without messing up. Of course, you're limiting yourself A LOT, but it's a good thing to know, specially if you make music for money

Same with Taylor Swift. Just because lots of her songs use simple chords people say she's not a good guitarist but she's actually a fantastic rhythm guitarist. Her strumming and dynamic playing are amazing. She can make simple chords sound great. Other guitar players recognise her talent, it's usually people who don't play who just parrot things they've heard other non players say. She learned to play guitar on a 12 string at 12 years old. She can play harder chords but chooses not to for ease while singing. She uses a capo a lot and focuses more on where to bring it down, build it up, palm muting, sharp cuts in places she wants you to just hear the lyrics etc. Her Tiny Desk Concert is just her and her guitar/piano and it's brilliant. She's been using more complex chords on her last few albums and more finger picking too.

I can name virtually any modern band or guitarist who outplays him at his own game - John Mayer, Tim Henson, Fleet Foxes, Ben Folds, David Ryan Harris, Hozier, Mumford and Sons, The Lumineers, Javier Reyes, Clapton, Knopfler, Isaiah Sharkey and so on. It’s fantastic to commend him for his singing and his early compositions’ influence on pop music but he has really stagnated musically these days and is undeserving of such praise from people who have no idea what great guitar playing is like, leave alone the intricate guitar work in the folk/acoustic genre he used to make music in. It’s really tired praise and is frustrating to hear from people who have no idea what they’re listening to.
