Grated courgette. Squeze out the juice or add a little salt to take the juice out.Grated the carrot. Use mild onion, I used large spring onion and some garlic chives to keep it mild. Add mayo. Hope this helps. Carmen
Yes please to extra courgette stuffing blog please. I have never stuffed a courgette - think I might try! Having been camping for a week the courgette harvest was scary today. Probably will resort to freezing chunks for soup, or might make the soup first and then freeze.
Lovely cooking! I stuff smallish courgettes just like cannelloni. Hollow them out so they are a tube and stuff with spinach and ricotta. Looks nice if courgettes are different colours. Put in a single layer in an ovenproof deep dish and top with a rich tomato sauce. If you want you can sprinkle cheese and or breadcrumbs. Bake for 30 mins, 180 c. Another good filling is a beef or vegetable ragu with a bechamel sauce and grated parmesan on top. I also love smashed courgette, mint and lemon brushetta. Xx

I've heard of people making courgette flour and you can substitute a portion of wheat flour with other kinds - something they did in the Depression in the US. Mediterranean roast veg is good - red onions, courgettes, etc and just plonk in sweet peppers or whatever else you like, add a good sploosh of olive or avocado oil and season. Would make a lovely pasta sauce whizzed up and the pressure canners out there could make a lot of that in the summer to last throughout the year. Use it instead of passata as the base on pizza and with just about anything else.
Please, please give us more stuffing fillings. I love courgettes but you can have too much of a good thing 🤣 some new ideas would be extremely welcome. Thanks Jessie x

Yes to extra courgette recipes! I grate and flat pack freeze extras to go in winter soups and casseroles. Helps with the glut.
