That’s where I have been messing up. I was making a French white sauce and then adding cheese but it thicken up so much I’d have to cut with more heavy cream. So skip the flour. It still tasted fantastic but I’m only one person😂

I’m personally don’t make Alfredo with cream, just Parmesan, butter and pasta water, I’ve never found it lacking in creaminess or flavour, may I ask why the addition of cream? It’s not how it’s normally made and just seems to be a bit decadent for no real reason.
It's the correct way to make Alfredo sauce, that is why. Alfredo di Lelio popularized it in his restaurant in Rome. He'd toss the fettuccine with the pasta water cheese n butter at table side. The tossing creates the creaminess. No heavy cream. Francesco Dama has a nice article on it in Italy Segreta. Also Max Miller on Tasting History here in YT has a great episode on the history of it.
