    What I love about Italian cuisine is they let the fresh ingredients do the talking, accented with herbs, lemon, olive oil and salt. Compare that to what they serve in you in the US where everything is covered in gobs of fake cheese, hot sauce, ketchup, and high-fat, high-sodium, high-sugar gloop. If you take "You are what you eat" to heart, it's no surprise that Americans suffer the highest rates of chronic diseases and obesity while spending the most on healthcare out of all the OECD countries.

    What a great video Matthew, amazing footage and mouthwatering dishes and products. The passion of Pepe is really addictive. I would love to taste his food, made with good ingrediënts, knowledge and love. His phrase 'Simple food for intelligent people', underlines the Italian cuisine. In June I was in Italy but in the northern part of the country. Now I really want go south. Keep up the good work, love your channel!

    As Italian who lives abroad for 1/3 of his life I can say:
    - simplicity: usual Italian recipes have a limited number of ingredients;
    - seasonal and/or local: this is the reason why nearby towns may have the same recipe but with one different ingredient (and still claim paternity over it 😅😂);
    - freshness: probably connected to the previous point;

    Underlines how long and diverse Puglia really is. I live two hours south of Orsara, where I teach cooking, wine and olive oil and some of this is even new to me. Think you know Puglia, think again.

    Man oh man! Salivating here but I'll be in Italy in a few days and then again for the grape season!
    We do have great food and mead in Denmark but everything seems better in Italy...especially when I see that pasta, natural rustic veggies, figs and Wine!!
    Probably should just move there altogether. :)

      It’s extremely challenging for me and obviously I’m not an expert at it ha ha. But when I’m not traveling I work out a lot and I incorporate intermittent fasting into my regime

    Great video and I love italy and Italian food but c'mon Matt. Is Italian food special?
    Is it better than Chinese food, Spanish food, Greek food Caribbean food, Indian food, etc, etc? It's not special but part of our global love in with different food. A big westernised chef's hat does not represent our global culinary heritage. A good wine tastes good in all these locations. WT

      Thank you and yes I do believe that Italian food is very special because of the diversity, the history, the culture. Yes there are a lot of other great cuisines around the world (I lived in SE Asia for six years) But I find that all the different regions of Italy speak to me the most food wise

      @@drmatthewhorkey Hey Matt, I love Italy and Italian food although it's very regional. My personal favourites are Umbria and Sicily. My first foreign holiday with my family was to Italy in 1979. I was 10 years old and that experience opened my mind and was the most important influence on my life and the way I view the world. I've travelled to Italy many times since. I once had an Italian girlfriend who lived in the States. When we spent Christmas (1996) with her family in the mountains of Udine they rolled out the Royal carpet in culinary terms, quite literally. Her aunts and uncles were chefs in Buckingham Palace in the 1960's and the food they laid out for us, day after day, was fit for a King. Nothing complicated, just great produce cooked with love.
      One of my fondest food memories of Italy was driving in Tuscany and pulling over into a little hamlet to watch and talk to group of ladies preparing a wedding feast. They were stuffing pig trotters on a big table outdoors. Preparing them with that love that I mentioned earlier. I actually have a vacuum sealed Italian trotter at home waiting to be cooked and served with a fine Italian wine before too long.
      My beautiful wife is Spanish, hence my love and appreciation of Spain, a country I've known since 1982. Spaniards are highly prejudicial and believe their food is the best in the world. Italians think the same thing. I forgot to mention France in my first comment but I'm pretty sure they have the same opinion. I'm very happy to let all of them believe what they want. I love Italian food and I'm glad you do too. You can see I enjoy writing and I hope it's fun to read. All the best. WT

    Not as interesting as your trip and video, I had a wine last night, from the neighboring region of Basilicata, that has earned my buy of the year, so far, @$25: 2017 Musto Carmelitano Aglianico del Vulture Serra del Prete. Few reds at that price have engaged me as much
