5 eggplants, cut into thick slices
25 g (1 oz) butter
3 tbsp olive oil
1 onion, chopped
500 g (1 lb 1¾ oz) tomatoes, peeled, seeded and diced
1 stalk fresh, chopped parsley
1 garlic clove, minced
2 eggs
Juice of one lemon
salt and pepper
