I Tried Fried Chicken made from Enoki Mushrooms... and it was pretty good. Best part, It took maybe 15 minutes.
I recently saw Merle trying Enoki mushroom chicken from an instagram post by rhi.scran I'll link it below... and it looked REALLY good.. but there was one part I thought I could fix so I gave it a try.
Curious what you think of how the problem could be addressed with this fried mushroom chicken or chick'n

@thenomadmagician3417 That sounds like the ticket!
What if you marinated them, but then pressed them in the tofu press so that it gets denser and drier
Thats a great idea!! So I made the rest of them for dinner last night and before I fried them I pressed them between 2 paper towels for a few minutes... I think this helped. I was also considering boiling them first in a flavored bath, then frying them... kinda how the boiled mushroom trick works to begin with
@@SauceStache What about using methyl cellulose to make the fibres stick together?
Mike from the channel Atomic Shrimp once used a huge puffball mushroom to make a fried chicken cutlet analog and he's used Chicken of the Woods bracket mushrooms as a chicken substitute and he always seems to be surprised how well mushrooms do in this roll so this doesn't surprise me.
Ive done chicken of the woods and its been incredible!! Better than this version, but harder tom come by. I still have yet to try puff ball!! Can't find them
@@SauceStache I don't think puffballs are cultivated much, at least I've never seen them for sale. You pretty much have to gather them yourself. Growing up we used to hunt mushrooms a fair amount and sometime tried puffballs. They pretty mediocre as I recall. Morels were much better.
@@durwoodmaccool890 I've cultivated them. But they need a wild setup. If you find a well used horse pasture and drop a bunch of them you will probably get puffballs popping up. You can also make a slurry out of unsulphered molasses, non chlorinated water and a pinch of salt. Water the soil with that in an area with good substrate and they will probably take. They have a complex interaction with micro flora in the soil so you probably can't grow them in a lab.
Chicken of Woods is only available in the Fall (October/November) on the eastcoast but it's amazing.
You're a delightful mad scientist of delicious food.
hahah thank you!!!
LETS GOOOOO, if there was anyone who was going to crack the code of that hardcore CRUNCH from enoki, it would be you. Hats off to the chef!
Merle!! And even Derek's in the comments, too!!
Made this last night and had an old classic “chicken and waffles “. It was delicious! Had some batter left so I made some onion rings. Very good!
Make a fish filet with Enoki, the natural smell and taste of them is already fishy. Make a marinade that uses some type of seaweed, Kombu, if you can get which has great Umami flavor. Steam the Enoki first to help break down the cell walls so it is more easier to chew through.
I would like to see this !!
It sounds like a good alternative for fish and chips.
I need to get my glasses fixed I thought he had a handful of zip ties he was turning into fried chicken.
whahah I can see that ;)
One of my favorite vegan restaurants in philly makes this!!!! Been eating it since like 2019. Best thing on their menu in my opinion. If you're ever in philly check out Nourish, their mac and cheese is bomb too
Great video. And congrats on the new sauce launch man! Looking forward to trying some when I'm back in the stateside. Thanks for being honest about the chew here, I've found it dangerously chewy in the past when eaten in clumps and not broken apart. I'm seeing so many people doing these whole enoki clusters just for the show of it. Appreciate your take on it. Keep knocking em out!
My favorite vegan cooks!!
I LOVE enoki, so I’m so excited to try this
Its good!!!! and easy!! hahah they are really good!
You have the best play-by-play ever.
This looks very good! Enoki are so underrated!
I think it'd be totally fun if you and Merle started to do videos together in a way. Maybe a type of call-out, like, you give 3 ingredients & she has to make something (and then limit the number of things she can add). And then she'd do the same for you in reply in the video where she made your call-out ingredients... I just think your two are both creative, and I'd love to see how you could build off one another.
Omg you have lost weight, You look good 👍🏾 I’m happy for you 😊
Thanks for introducing me to these mushrooms! Will definitely have to try them.
This dish looks absolutely divine!!! Try serving it to your friends at a dinner party.
I wonder about salting the mushrooms to draw out even more moisture. Or painting the batter with a brush
Always appreciate the work you put in these videos since I am vegan and always trying to find healthier alternatives. I usually try to eat alkaline and just recently found out about this one ingredient agar-agar, do you think could find some recipes using that? Thanks anyways my man
Hey Mr. Sauce Stache, sir!
'scran' is a British word used to describe food, often in the context of fried foods, quick meals and yummy fast food. You pronounced it perfectly 😊
I have never tried enoki mushrooms but this seems to be such a fun way to eat them! Would probably be a fantastic topping for ramen too!
GOOD MORNING SAUCYMAN!!!
Chicken Mushroom, let's goooooo!!!
GOOOOD Morning Christopher!!! First!!!
@@SauceStache hahaha, it's been so long!
What did you think about todays thumbnail? Taking it back old school a bit?
@@SauceStache honestly, I didn't even look at it lol. I got the notification and opened RUclips asap lol.
But looking at it now, I like it. Showed the subject clearly and your enthusiasm.
hahaha dang it! was wondering if thats what got your attention so quick this morning haha but thank you
I know I’m 11 months late but I tried this recently this and I use the same method you used but I reversed I used the wet batter and then dry batter and put them in the freezer for a like 4-5 hours they came out great I kept some in handy in the freezer and they still tasted great I approve this one. 😊
The way Mark tossed that mushroom into that boiling pot of oil, making it almost overflow made my anxiety go 📈📈📈🫨
Yeah... mine too.... I was in too much of a hurry to be making a frying video
@@SauceStache Livin' on the veg!
I hate when I'm sitting here working, hungry, and one of your videos comes up! 😂😂😂
Would letting them sit in the chickun powder for a few hours help dry and dry marinate them? Maybe add them to a smoker for a while to dry out Nd add flavor.
Definitely want to try this out
I use them to make the "fish and chips, fish" in my country we call it fishknusperli translates to crunchy fish. The enoki I call crunchy mushroom. For that I kinda have the same procedure like you but the batter is made of flour, dill, seasoning and beer. With that I prepare a vegan tatar/Remoulade sauce (vegan mayo with little minced onions, pickles and parsley if I like it a bit lighter I add 2tbs of vegan skyr to the mayo) give it a try it's delicious. If you want it even more "fishing" just add some seaweed powder to the batter. 😊 ✌🏻
Ps:love your content Greatings from Switzerland 🇨🇭
I thought of you the other day when i was watching an Aisan Street food tour that used these.
sauce stache is looking really healthy nowadays
Interesting! One day I will get to try these fancy mushrooms. One day.... lol
They are really good!! If you have an asian market around you they will almost always carry Enoki! They are usually around $2 a bundle and can be used for so many different things!!
Hey Sauce Stach, have you ever tried turning oils into powder by using maltodextrin? I Love using it on homemade chips, it can turn oils into dry powders. Seems like a good way of adding dry flavours into things for this video. Although I do not know how the powders behave when you expose them to a lot of heat, but may be worth a try?
I would love to try air frying this.
imma try this it seems simple enough
Hi I would like to know if you could make a "dupe" of alpro's not milk ? (Oat milk that has milk's taste !) Thanks and greats videos as always 😊
Do you think this would work with an air fryer? We just got one and looking for ideas 😊. Thx!
i'm curious if you could bundle a hole bunch of mung bean sprouts and do this.
The only problem is locating enoke mushrooms. It does look great!
So if you have an asian market near you they almost always have them! But otherwise they can be tricky to find for sure
Definately check out an asian market, most have them, and depending on where you live the mushrooms can be quite cheap! I believe one cluster goes for like 2 bucks where I live, which is certainly cheaper than chicken!
Yeah same here.... that 1 cluster that made 3 big patties was $2... you could really break it into more pieces for sure!
I made these after seeing Merle and I did marinate them like she did.Though delicious..I found them really stringy and hard to eat. I'd have to warn others to really chew if I were to serve them. Curious to try the drier method.
The chew was rough!! I think they have to be pretty dry for them to work. 50% of mine came out good, the other half still had the chew. I was confused when Monica just bit right in to hers no problem hahah until I tried another one hah
@@SauceStache Yah!! Monica's looked effortless! I was actually cautious of the "choke" factor when I tried them. I'm curious to also try the "bunched up" tofu skin recipe I've seen floating around next.
I just found some at our Asia store: BOY THESE ARE INSANE! try to find some really really recommended. And I just at them raw, I cannot wait to get more and fry them up in a better ok I’ve gotta
The only mushroom that I’ll eat. Never had it fried though.
Dr. Stache use wondra flour and you will see the difference. AND I received my not steak sauce will be using it tomorrow.
This might be totally out there, but perhaps one could tenderize the mushrooms a bit with an enzyme rich marinade or nixtamalization.
Also, there is a slightly more tender and thicker variety called "seafood mushroom" in Asian markets. This one may be easier to work with than the super thin version. I believe it's much more tender.
I have Winter Jack (Daniels) whiskey. Can I use that in place of vodka?
the word "scran" is a Northern English slang used in a way similar to "grub", "munch" etc. Though i think the use of it has expanded out to other parts of the country too.
Can you use an airfryer or almond and coconut flour? I'm diabetic.
That DOES look good! 🤤
It was pretty dang good!! We made them again the next night as part of our dinner... I made smaller nuggets and they came out great
I bet that you could make an amazing fish n chips with that.
Maybe the trick is to chop the Enoki and mix with something else before battering? I appreciate your efforts here, so thanks for posting!
I had a question, have you ever made cauliflower ragu or cauliflower Bolognese? I was just wondering, because I'm thinking about trying it.
I would love to be your guest tester once 👍👍😋😋
I saw both videos doing this
What did you think? !
Ok❤😊
Haven't watched in Lord knows how long. My boy den slimmed down
I love the taste of mushrooms. I loathe with every fiber of my being, the texture of cooked and raw mushrooms. Where does the enoki fall on the scale of rubbery squishiness in comparison to say white button mushrooms? (I usually pulverize my mushrooms in any recipe)? Help! This looks so good.
I would say they are crunchy and chewy in texture, kind of like asparagus and broccoli
You r looking great..
Your weight loss is amazing.
Oh ya and love your videos
Thank you soooo much!!!
Give us the batter recipe dude!!! I'm about to put a table spoon of baking powder I there is that right?! 🫠🫠🫠🫠
I love mushrooms… Someone should make a great fantastic recipe for mushrooms and forget the chicken
why do people who don't want to eat meat want to call everything they eat meat? mushroom chicken. hmm
hello! for the future, I hope you're a bit more mindful that when you're editing your content that it'd be helpful to sync/align your verbal directions with your on-camera demonstrations. I had to rewind the segment where you went over the ingredients to the batter more often than I'd like. this could be a preference thing on my part but I think this would offer viewers a bit more clarity. otherwise this was a great video and my batch came out perfect. thank you!
Yes good choice. No need to marinate Enochi s they are too fragile.
Maybe grind them up with a food processor and add a little bit of the methylcellulose magic to make a chickUn patty???
I really hate enoki I've tried them all around south east asia and I've made them myself, it's always that tough chewy texture and they get stuck into your teeth and they are not easy to digest as well 😅
those are all vegan Thai recipes lol... come to Bangkok and try all these crazy dishes :D
Can you please make a NOT BBQ Sauce recipe. Pretty please???
Bro. I thought you were VSauce for split second
That oil super not good bro
And I'm trying to get away from fried foods. Then you go and DEEP FRY like a master in a 3 qt saucepan (sigh)
scran means 'food' my dude
Bro on ozempic, lookin gud
🙏😎😋
Okokokokok❤❤😊😊
MY MAAAN!!! Sorry for late comment 😅
Maybe for steak? 🤔
Man, if I eat Delicious Vegan foods like this I think I don't need to eat real meat maybe ones a while like occasional.
🪻Peace! Hello! May The Lord Almighty keep you well and very, very blessed!
🪻I would first like to say that I love your videos! They are very helpful; and it's amazing how many ways you find to make vegan meat! I'm not a vegan; but I believe that vegans are mostly eating in a way we should all eat. Vegetables should be most of our diet.
🪻Can you tell me how much Green Chef costs? Even though I'm not a vegan, I would like to receive their 100% vegan meals.
I thought this was the guy from hot ones
Venom fissures the vegan meat game . OHKO!
I bet this young man is very healthy keep up the good work!
Thank you!!!
Vegan Vsauce
just go to canes
What about fried shr omz 🥴
fried mushrooms then.
Fried chicken is Fried chicken!!!!
Fried mushroom is Fried mushroom!!!!
I hate how vegetarian foods are given meat names....
Broooooo, he lost weeeight !!
You had fried mushrooms. Full stop.
Show us how you bite the enoki off. No need to cut the video there, i want to see the struggle.
I never put a full bite and chew in my videos... who wants to actually watch that. I describe how it's not a great bite and chew. I say it's still pretty tough.
I am the one who enokis.
It isn’t chicken if its made from Mushrooms…..
No idea why i watched this. I literally hate mushrooms.
Why?
If it isn't meat why is it necessary to make it look like meat?
It's amazing to see how thin you got. Even your glasses look too big for your face now.
😂😂😂
Vegetardians...😅
They are never very convincing! 😅
Dude it is NOT fried chicken.😂
No duh
Thats not chicken, stop calling it that.
You didn't try fried chicken.... you tried fried enoki mushrooms. Dude. Call it what it is. FWIW, I wouldn't mind trying this.
Naw, with all the research you do you normally you could find out how to pronounce her name :( esp if you’re gonna build off her work. Come on now
I mean come on man, he literally apologized for not being sure how to pronounce it
C'mon atleast he didn't say the name with wrong pronunciation. You would've been mad about that too like nothing with satisfy you man
This just looks weird. Just... why?
If its made from mushroom and doesn't contain chicken it's called fried mushroom not chicken
I am no vegetarian by any stretch but I will make this.
Enjoy!!
FYI her name is Rhian and 'scran' means food in many UK dialects. Thus @rhi_scran
