It would be sad to try to restore it that way ; the sphinx is important today because its was there for nearly 4500 years. Its fully normal to see some degradation on it by the time passing.
On the other hand, the original recovering of the gizeh pyramid ( after 1000 AD ) , the parthenon ( destroyed in 1687 ) the Alexandria lighthouse ( destroyed in 1303 ) are really sad because those building could have been in nearly perfect condition today, but they missed it by a few centuries.
Two case i always found absolutely horrible are the mont cassin monastery ( build in 529 destroyed in 1944, there is a video of it ) and the abbey of Cluny ( founded in 909, one of the biggest cathedral "Cluny III" of all the midle- age destroyed after the french revolution ) ...

The headdress stopped at the chin line. They filled the space from the headdress to the shoulder because they feared the neck could no longer support the head and they didn't want it to fall off. In 1744 (pictures did not exist yet) there is a drawing of the uncovering of the Sphinx by Frederic Lewis Norden showing the neckline to the shoulder. All the statuary in Egypt were brightly painted to look real you can still see the red striped paint on the top of the headdress and one blue stripe on the right. The amazing thing about all the statues is they are all perfectly symmetrical faces there is no measurable difference from the left side of the face to the right they are identical. They can't explain how that is possible
