    Don't forget to remove the rings when they're cool and vacuum sealed folks, they can stick and you can't unscrew them

    I find an electric pressure cooker speeds up the same process.
    I cut up and freeze my toms until I get enough to process. I put them in an electric pressure cooker for ~20 mins with some water. After it cools, I pour it in a colander over a stockpot. Pull off any peels from the toms with tongs. The remaining toms in the colander you can can. I freeze them myself. The liquid in the stock pot I let settle; you pour off the water at the top; let it settle; and pour more off; and repeat. Then you are left with delicious tom juice. The seeds will all be at the bottom of the stock pot and juice.

    Crock pot Temp is over 212 degrees Fahrenheit set on high. After four hours mine slowly boils. Adding the thicker liquids plus salt that saturates the liquid and raise it's boiling point, I would say your statement of 220 degrees is correct is a bit high but 200 degrees is about right.

    Ball also has a "new" book full of fun recipes with pictures. I use it all the time. I've never seen a steam canner, but I'm going to check it out. My pressure canner isn't big enough to water bath can quart jars, and I would like to use that size without pressure canning.

    If you don't have an immersion blender you should check them out. Way easier than transferring into your food processor.

    Last year I canned spaghetti sauce with meat and Chill with beans and meat both turned out great also Dill pickles bread and butter pickles and fermented and froze a bunch of stuff and so it begins little early for me yet in Western Washington state happy canning 🥒🍅🥕🧅🥦🌽🌶🧄🍆

      How is your garden doing this year, noticed ya said your in W WA? I'm in SW WA. Got my garden in about 4 weeks late but it seems to be growing faster then I've ever seen my garden grow lol.

    Good morning Kim!..GREAT video..You are a good teacher..Canning tomatoes again this morning..already have 23 quarts in pantry..Live in South East and our 'maters are winding down. Any suggestions for what to do with 6 lbs of cherry tomatoes?

      I always just throw my cherries into whatever sauce im making! or you can dehydrate and cover with olive oil like "sun dried tomatoes"!

    Have you ever made cherry tomato jam?..Kinda interesting taste...really good on biscuits, cornbread and crackers with cream cheese 🍅🍅

    What is the time frame for cooking them in the roaster? You mentioned taking liquid out at 6.5 hours and continuing to cook them down. What is approximate time in total? Thanks :)

      it depends on the volume in your cooker and the temp you have it at! but its not rare for me to cook them for 12-24 hours!

    Hey, nice rack at 18:00+ mark! If you want your husband to marry you all over again, try this venison recipe:
    Slice the venison into ¼” slices (against the grain). Coat it with flour or fry mix. Fry it with sliced jarred jalapenos and garlic. IMPORTANT, NO ONIONS! Put that in a large dish off to the side. Then fry sliced mushrooms, sliced jalapenos, and garlic. Pour that over the meat in the dish.
