Seriously, the meat of fresh water prawns (big ones) is just like eating seawater lobsters. If it’s soya pan fried, then I prefer the small fresh water prawns because they are so much more tender and smoother compared to the big ones. To some the big prawns could be tough and “crunchy” if they are not used to it. I like both. 🤣 BUT eating fresh water prawns is not so much about the meat but the HEAD. Yes, you heard it right… the roe in the head is awesome and the best IF the chef knows how to prepare it! The roe in this prawn is much tastier than lobster IMO but not all will agree. But then again, there’s the risk of not having a lot of roe in the prawns if you are unlucky to get one with not much roe. I will have another video premiering on 2nd August where brother Fatt did an awesome job cooking the roe. It’s a skill that not many chefs have mastered. Please wait for that video. 🙏🙏🙏

I can taste the frozen ice in the prawn heads now at Greenview so I did not go back there for a long time unless I want to eat something else like honey squid, fried salt baked chicken, etc.

Freshwater shrimps of this nature are farmed and contain toxins due to water conditions and the shrimps’ feeding habits/ability to tolerate unhealthy water environment. I have stopped consuming them but others can decide for themselves.
Visited just after watching this posting. They used analogue/spring weighing machine to weigh the prawn instead of the digital one. For product at Rm300/kg, this is unacceptable. Taste wise, it was not up to expectation. No cooking wine was used to enhance the prawn flavour. Plain water was used instead of chicken stock. The pre fried noodles were broken into tiny pieces thus became clumpy when served. I observed the whole cooking process at a distant. The cook while cooking, used his bare finger to poke into the broth and brought the finger into his mouth to taste. Overall it tasted just salty with absence of umame and fresh seafood taste and flavour Place was hot, noisy and uncomfortable. All of the aboves at this price??

I did not say that the environment is air-conditioned and comfortable. You mentioned that you observed the entire cooking process and he used water instead of chicken stock. Not sure if you are really there or not… the chef works very fast and there’s a big pot of chicken stock simmering to his far left (if he is facing the wok). I observed him scooping the stock for braising the mee at least 3 times during the cooking process, so you cannot possibly miss this. Not sure about dipping fingers as I did not see that (so cannot confirm or deny). As to the taste and saltiness level, it all depends on every person tastebuds. I love stronger tastes and saltier dishes, so it suits me well but others may find it a bit too much. As for scales, hmm, you may “win” sometimes and “lose” sometimes. May not be 100% lost all the time. I would say that the RM180/kg ones are not bad too even though they are frozen.
