Are these real people playing, or is it a computer?
Hal Leonard records real musicians in an actual ensemble session, not one at a time. The musicians' skill and discipline suggest, but thankfully do not duplicate computer precision.

They use Sibelius to digitally format the printed music, but they still produce live demos.

A combination of both! Composers who write and arrange music for marching band often use computer programs to playback real samples of audio. (Like you see here- Sibelius, Finale, etc.) Meaning, they can program whatever notes they want into their score, but the sounds you hear are pre-stored by real recordings of instruments. Each different band instrument has sample recordings of audio- playing every note through multiple scales, at different volumes, note lengths, etc. These samples of audio are all stored into the software and programmed by the director. So really, you could say this is many small recordings put together to make one big presentation. Most pop producers and even some rock producers use samples of audio to save time and keep a consistent sound in the studio.
