    Oysters with golden sabayon and green shoots fondue
    18 oysters
    ½ punnet of cress
    500gr fresh spinach
    50gr pines nuts
    30gr butter
    Salt - pepper
    For the sabayon
    4 to 6 yolks (depending on the size)
    1dl dry white wine
    2dl fresh cream
    50gr clarified butter
    For the presentation
    500gr coarse salt
    Dill
    Pink berries
    Duck with orange and pommes soufflées
    For the duck
    2 ducks
    1dl sunflower oil
    3dl poultry juice
    6 orange
    1dl honey
    5cl vinegar
    50gr butter
    5cl Grand Marnier
    Salt - pepper
    For the syrup
    ¼ L water
    125gr sugar
    Poached pear, hot chocolate and crumble
    For the mousse
    100gr butter
    50gr sugar
    100gr yolks
    250gr “manjari” chocolate
    For the hot chocolate
    35cl milk
    30cl cream (35%)
    ½ vanilla pod
    ½ cinnamon stick
    30gr brown sugar
    100gr “caraïbe” chocolate (66%)
    50gr “extra bitter” chocolate (61%)
    For the chocolate crumble
    50gr flour
    50gr cacao powder
    100gr butter
    100gr sugar
    80gr almond powder
    For the pears
    6 pears
    1, 5 L water
    450gr sugar
    1 vanilla pod
    1 yellow lemon juice
    For the whipped cream
    2cl liquid cream
    15gr caster sugar
    ½ vanilla pod
    Some cardamom corns

    Marie-Antoinette, la reine martyre, n'était pas la dernière reine de France. Il faut se tourner vers sa nièce, fille de sa sœur Maria-Caroline de Naples, l'épouse du Roi Louis-Philippe - la Reine Marie-Amélie. Chose étonnante: ni le roi ni la reine avait des prétentions de beauté, mais leurs enfants, et surtout les nombreux fils, étaient épitomés de pulchritude.
