    This recipe proves every Caribbean island has similar dishes. This dish is 80% of the way Jamaicans, Haitians, Trinidadian etc..... make stew chicken. Except they add thyme, scotch bonit pepper, green onions, ketchup and a little more sugar. Either way, very similar recipes, and this one looks good also :)

      The base for all caribbean dishes are almost the same. Latin islands like DR & PR & Cuba use onions, garlic, cilantro, and bell peppers as a base. Afro Islands use green onions, thyme, garlic, Bay leaves & scotch bonnet pepper. In my opinion, Jamaica , Trinidad, Barbados etc... Food taste more flavorful. But I still love me some DR food tho!

    Make Adobo seasoning with: 4 tablespoons salt, 3 tablespoons onion powder, 3 tablespoons garlic powder, 3 tablespoons ground black pepper, 2 tablespoons ground oregano.

    I tried this recipe yesterday. I just added the cilantro to the marinade and added chicken stock and tomato paste before simmering, for more sauce. It was CRAZY good! We all ate seconds 😋😊

    Lady you are a pro at this don't mine some people complaining, they are just narrow minded as they only do it a certain way. Everybody does it differently depending on what part of the island you are.

      true yet there is no cleaning of the meat, and no sofrito being added. so to me that is pretty important. it doesn't matter how you make your sofrito but she skipped a few steps.. also cilantro doesn't just top it off, it is added to the dish. I like adding carrots and broccoli to mine

    Bravo!!! Hi im Dominican and I love cooking as you can see. One of my special dishes is Pollo Guisado, and i can tell yours looks so delicious. Something I do is I season the chicken with smashed garlic, oregano, sour orange (we use that too much for the meat here) or lime or lemon, black pepper, soy sauce and a little of adobo. I let it marinate for about 1 to 2 hours. Once I brown the chicken is when i add the tomato paste. Once the chicken is almost done, I add the vegetables so they can be a little crunchy. Thats the way I do it and it taste very good, too. I wish I could see more videos of yours about my country. Its such an honor seing you cooking one of our dishes.       Wow. If All The Islands Went To Africa They Would Realize That They Still Cook. Ike Their Ancestors From The Mother Land. The African was Brought To EVERY Island. His Cooking Skills Went With Him during The slave Trade. The Spices Too.

      A Different Wonderful Taste. I'm.Now learning To Cook Food From India and Greek and Other Mediterranean Food and Make The Breads. I Grew Up with a Mother and Father that were Excellent Cooks. My Mom and Dad Made Spaghetti Sauce That Took 7 hours to Cook. He Had Many Italian and Jewish Friends. Lol The Only Thing I didn't Like To Eat was
      Gefilte Fish. I Still Don't Like Gefilte Fish but I Love Pickled Herring.
      Japanese Hibachi Chicken. Spain's
      Seafood Paella. Jamaican Oxtail.
      Trinidadian Roti. Good Ole American Beef Brisket and Of Course Some Good Soul food. God Made Us All.
      I Love Us All. Peace. Don't Forget
      Good Old Cheese Cake. Peach Cobbler. Apple Pie. Banana Pudding.
      My Dad Made Blueberry Dumplings!!

    It adds extra depth of flavor if you add a bit of butter and chicken stock after the chicken is sauteed.

      Do you have an actual recipe with the measurements? I love this. I used to eat it when I lived in NYC but now I am back in KY and trust me nobody here cooks like that here.

    I'm Dominican and you remind me of mother cooking all happy!! THE only thing you need is wash the chicken in lemon or vinegar to kill bacteria. Then add liquid Dominican sazon called ranchero or do it from scratch.

    I tried it tonight, it was delicious, I let it cook a little longer then 25minutes. I'm so glad she's not using all the packaged condiments, this is how my grandma used to make it. There are recepies with tomato sauce, paste and a lot of other versions, this one is a 5 star. Thank you.

    I make this all the time. I use tomato paste instead of fresh chopped tomatoes. I also add soy sauce with ginger, I add more adobo than what the chef used, I add sazon (not store bought. Both made from scratch without salt) and last but not least, about three heaping table spoons of sofrito for a whole chicken. It comes out beyond delicious.

    Made this recipe for my other half and he couldn't get enough of it! I did add a little more Adobo seasoning than what the chef in the video used, but that was the only variation I made. Not only did the chicken taste out of this world delicious, but the texture was perfect and not dry at all. Can't wait for the leftovers. I will subscribe! Awesome recipe!

    Imma get hell for saying this, but people relax!! Where I live in the USA many people don't know where Dom REp is in a map (many Hispanics here don't know where the new world started). So for her, an Italian cuisine chef to take an interest in our food, is a good thing. I am Dominican and I LOVE Italian food btw.
    So hush, I know people that make beans with like three or four ingredients and it comes out amazing.

      May I add the difficulty of finding certain ingredients in certain areas, here ok n SA texas, I can only find auyama during this time of the year, fall that is. Recao, nope only in selected handful stores, is cilantro only. The recao, idk why I can't remember the name that is for soups, I am yet to see it here. Chuleta ahumada, have not seen that but I don't see why Texans wouldny have it. Plantains, ufff don't get me started with that. New Yorkers have better luck with the plátanos.

    We have the exact same thing in Trinidad, a caramelized chicken recipe we call "Stew Chicken" but we marinate overnight in sofrito!

    This is a great receta mi abuela would approve. For a City of La Romana twist try caramelizing a a few spoons of orange juice instead of the sugar. It will add great color and wonderful citrus flavor. Thanks for your recipe.

    I make this dish ALL the time and it's the one my sister always requests now when she comes to tea...I made it last night for guest and everyone went back for seconds and the people that didn't like olives even commented on how they liked them in this dish....ty ty ty ...guess what I'm heating up for lunch ^_^

    I love this women she's great I'm Italian my husband is Dominican yes i get down in the kitchen boo! My mother in law taught me a lot and this lady did a great job like someone said if varies from house hold and nobody's complaining when so many Spanish people absolutely butcher I mean just ruin lasagna or baked ziti just sayin😂😂

    I don't mean to be negative Nancy, but I am Puerto Rican and I never remember my mother putting sugar in any of her chicken dishes. Latinos do use a lot of salt and that's another reason many of us have high blood pressure, with adobo and extra salt. But I know it's going to look delicious. Thank you for sharing.

      Sugar takes food to the next level, try it! Just a small amount though, not too sweet just enough to balance the tomato flavor. Works with other dishes as well😉
