    THE GREEN SOUP RECIPE
The way to keep a green soup green is not to overcook it. Once you’ve added the peas and basil to this, take it off the heat and blitz it straight away. This is gorgeously light, but you can make it more hearty by using chicken stock and topping with fried pancetta. Serves eight.
    olive oil
1 whole head garlic, cloves separated and peeled
about 6 courgettes (otherwise known as zucchinis) cut into 3cm-thick slices
    Salt and pepper
1 quart of vegetable or chicken stock
about 500g frozen peas (one bag, usually)
about 2.5 cups of fresh basil leaves
a bit of feta cheese (optional)
Finely grated zest of 1 lemon (optional)
Heat the oil in a large saucepan on a medium-high flame, then fry the garlic cloves for a few minutes, stirring often, until caramelized. Add the courgettes, two teaspoons of salt and plenty of pepper, and fry for three-plus minutes, stirring, until starting to brown. Pour in the stock, bring to a boil and cook on a high heat for seven minutes, until the courgette is soft but still bright green. (The original recipe says to add a cup or two of water, but I've been waiting until the end and then only adding water if the soup is too thick.) Add the peas, stir through for a minute, then add the basil, turn off the heat and blitz smooth with an immersion blender.
To serve, spoon into bowls and top with the feta and lemon zest. Finish with a good grind of black pepper and a final drizzle of oil.

I add yogurt to my green soups (usually I add broccoli too) at the end when I'm blending it with the immersion blender, and it just makes it extra smooth and extra creamy. Like having cream, but more tangy, and interesting.

What has been really cheering me up is that I made a list of things I would like to do daily for myself and I'm actually doing it. It includes a skincare/makeup morning routine, taking my meds, having breakfast, doing some exercise, I'm reading, I'm learning Spanish, and a few more things. And what is wonderful is that I'm truly not expecting myself to do ALL of these things 100% of the time. If I do it 80% and more I consider it a win!

I would love to see fashion content with Julia!!! I definitely had a psychological barrier with dresses a few years ago, seeing dresses as impractical because I bike everywhere, but bike shorts and inventive knots (for longer skirts) really solve everything and wearing dresses is so much fun for everyday (+ suuuper comfortable).

    1. Generally a terrible cook but am now baking my own bread and loving it.
    2. The toad that we found in our garden yesterday. First one after 7 years here, and it was a chunk! Also the neighbour's cat which visits almost daily.🐈
    3. The garden. It is such a tonic.
    4. Finally sitting down to watch Mad Men.
    5. Trevor Noah.
    6. Loving my husband and appreciating how lucky i am to have a man with whom i actually love quarantining!
    7. My Calm app.
    8. How lucky i am that i, and those i love, are still in good health.🤞🏻
    9. RUclips. Amongst others, your videos have been a real salve at times. My husband is a great many, wonderful things but he is not someone who waxes lyrical or pulls things apart to analyse them, any more than the necessary as he sees it, and in the absence of regular coffees with girlfriends or nights out, you have been that 'friend' with whom i can regularly check-in. Always a pleasure!☕ 🥂
    10. Kitkats.🤗
    22:41 Someone making a break for it!👀

I'm a person who wears dresses all throughout the warm season here in NYC (I first started doing it when I was pregnant and then nursing) and this year I'm making a conscious effort to transition them into the cold season too. But I know exactly how you felt towards your day dresses. Some comments I get from other women are just wild: 'Nice dress, but you're going to be so hot in that', 'I have that dress, I wore it last year', 'Is this dress from the XYZ organic local sustainable brand?'. It did seem like my wearing dresses was rubbing a lot of people the wrong way. But I guess I'm now too old to give a damn so I continue wearing what I like when I like.

It really sounds like you are living your best life over here cooking these amazing meals for humans+baby, really finding pleasure in tv and makeup, etc. like these are all pretty regular everyday things but you really communicate the joy and love involved in all of them. I find that really inspiring! Cooking is always so hard on my back and feels super stressful bc of the timing being so important, so I hope to cultivate some of this energy in my life too 😁

    • @anotherlemontree
      @anotherlemontree 3 года назад +1

I feel you on the timing thing. Most of my food is slow-cooked in a single pot for that exact reason. Thankfully I'm Persian, so almost all of our food works like that :) Even the rice we make to accompany our stews is slow-cooked with a lovely large margin for error.

    • @HannahLouisePoston
      @HannahLouisePoston  3 года назад +6

one thing that has helped me a lot with the timing stress is starting a half hour earlier than I think I need to, and prepping all of the ingredients for all of the dishes before turning on the stove. Like, chopping everything up and putting it all into separate bowls, salting the meat, opening the cans, etc. Then when it's time to actually cook the food there's nothing distracting me. AND it leaves time for some back stretching in between :)

I would have to say that my treadmill has been the thing that has been cheering me up this month. Since COVID started and my entire school and work life moved into my apartment I had really fallen off the movement train and had no motivation to fit exercise into my life. Since the beginning of the month I’ve made it a priority to get onto the treadmill every day for 45 minutes and not only has the exercise been good for me but also the result of knowing that I am following through with my decision is making me feel better and more confident in this new reality we have found ourselves in.

What a fun video! What's been cheering me up -
-Watching Star Trek the Next Generation while cooking dinner and transitioning away from my workday (my sister and I used to watch this together in the 90s so it brings back really fun memories)
-My AM coffee in bed, looking out of my window at the 'forest' that is my back yard
-Walking to the new coffee shop that opened up in my small town (and has outodoor seating - so I'm trying to take advantage of it since I won't probably go once the weather changes here in the PNW)
    - Reading on my Kindle at night in the dark, in bed under the covers (and the Libby app! I love the Libby app!)

The changing weather is cheering me up so much. It means I can turn on the electric fireplace and wear my cozy, comforting sweaters, and drink my coffee hot instead of iced, and the fires in California can die down, And I can go for walks and spend time in the park instead of sitting in my room, and just a tiny bit of the pressure is lifted.

Ah, I love dresses so much. I wear them constantly. Living in California I have realized that its quick, effortless, and cool (ventilation is fantastic in dresses in the neverending summers here) to wear them daily. And you’re right, I feel more put together when I do - I even get comments all the time about looking nice when I feel like I’m wear something that could be pajamas in how comfortable it is but it’s presentable and pretty. I’m on team day dress all the way!

Lol ok last comment I promise! I’ve been really cheered up lately by getting back into my eyeshadows! I rarely leave the house, but even when I do I love wearing fun sparkly colors on my eyes to make me feel better about having a mask on. And wearing makeup around the house just for me helps me feel put together and pretty.
I’ve also been crocheting garments for myself quite a lot and its been so fun and creative. I love the crochet Instagram community, they are all so encouraging and lovely to talk with. Its really fun to make friends with a similar hobby that you can talk with.
Also, playing board games and card games with my kids and husband has been lots of fun. They are 7 & 10, and are hilarious when we play! Its been wonderful:)

    Cheering me up Rn:
*I’ve been making recipes from the Skinnytaste cook books. Just cooking in general and trying new recipes.
    * I’ve been making my bed everyday. Which I would have never done before but it’s been making feel accomplished and happy.
    * the new Taylor Swift album-highly recommend
*Going for long walks. I will miss so bad when it gets too cold. I live in Northern Minnesota.
    * Because I’ve lost a significant amount of weight (75 pounds) I had to buy all new winter clothes which is good. I’ve been more careful about selecting clothes I absolutely love. So getting to wear new clothes I adore has been cheering me up.
    Thanks for sharing Hannah. ❤️

I love the fact that people assume dress=fancy, when in my head dress=I only had to pick one item of clothing, not two! And I will get my butt into gear to watch Umbrella Academy season 2. My husband and I loved the first season.
It's spring in Australia, and while the natives don't loose their leaves, we have quite a few deciduous plants around our house, including a large oak tree in the next door neightbours yard. It has been a real joy to watch the leave coming back, to see flowers bloom and hear more birdsong, especially as Melbourne is still in very strict lockdown. And of course, every video of yours brings me joy :)

I finished it already but LUCIFER has been the light of my quarantine ... I loved how simple, selfish, funny and easy to watch it was ... it made me so happy I miss it! Reading really slow (I almost always finish a book within a week or 2 days) the new release from the twilight books, and I created a blush project for my channel to love my blushes and rotate them I have about 150 blushes and I’ll go and use them four times each and rotate ten by ten ... simple things that have been cheering me out during a time when sometimes all I want to do is sleep and avoid everything. ❤️ loved this video Hannah ! ☺️

I normally can predict everything when watching movies or reading books. Which I suspect comes from the writer in me. But UA had me surprised more than a few times; so, YES GIRL! WE LOVE IT HERE TOO. My watercolor pencils and an adult coloring book are bringing me so much joy right now. I always wanted to get back into painting but all the fuss and preparation seemed daunting. So I just got a coloring book and some watercolor pencils. It's not even that messy like regular watercolor painting as I just use a wet paintbrush over the coloured in portions. Painting has never been so much fun and less fussy. There is no cleaning up after, as I just close the book and put away my pencils.

Ooh can I share a recipe too? This is a fall fave of mine and is SO simple and easy. I personally love being in the kitchen for a long time because I find it very relaxing, so I love a recipe that physically takes a long time but where the actions are very simple. Perfect time to listen to a podcast, chat with a friend, even read a book.
Behold, butternut squash pasta w/ caramelized onions:
    1. Preheat oven to...something? Idk, like 400. Roasting-some-veggies temp, basically.
    2. Slice up an onion (don't dice) and begin cooking over low-medium heat with salt and a couple tbsp of olive oil.
    3. Cut a big ol butternut squash in half, drizzle with olive oil and s&p, and stick in the oven.
    4. Throughout this whole recipe, stir the onions every couple of minutes so they don't burn.
    5. The squash should roast for ~35-45 minutes and the onions will take ~50-70 minutes to caramelize. Start boiling some water when you're nearing the end of the wait time on the squash. Throw the pasta in when your squash is done.
    6. When the squash is done, blend it up with some liquid (water, veggie broth, chicken broth, water+MSG powder, etc), s&p, and herbs of your choice (rosemary/sage/thyme are all good here). You now have your pasta sauce!
    7. Combine pasta & as much squash sauce as you want. Top each serving with caramelized onions when they're finished.
This has endless variations...you could add in cooked chicken, top with fried sage if you have the time, change up the sauce by adding in other roasted veggies (carrots are great) or tomato sauce, etc. etc. etc. Such a simple formula -- it takes a long time, but there's not much to do so it ends up being so relaxing!! Plus, one butternut squash is like 3lbs so this makes enough sauce for ~8-10 servings.

Cheering me up... I am Brazilian, so sometimes I go on Netflix and binge all the new Brazilian shows and movies there. So to my surprise, I found a little show called Spectros, which gave me a Buffy the Vampire Slayer vibe, only set in my city, Sao Paulo. When I see the credits, it was created and directed by Doug Petrie, who was a writer and Executive Produce on Buffy (he also worked on American Horror Story: Coven and Daredevil). So, now I'm on the third episode of the show and having a kick out of it, as a I am huge fan of Buffy. The show is about 3 teenagers (a Japanese girl, a black girl and a white boy) who get caught up in a supernatural clash as vengeful spirits from centuries past rise up in Liberdade, the traditionally Japanese neighborhood in Sao Paulo, mixing Afro-Brazilian culture and Japanese-Brazilian culture.
Another thing that's cheering me up is decluttering and selling my clothes, shoes and bags. :)

It’s a struggle these days! Oof! But here goes (also good gratitude practice!): quick natural make up (loving the Erin’s faces concealer Thank you!), dyed eyebrows (one less step in the AM and wake up feeling like you are 1/2 way there), tea (all the tea, currently Utpon Tea earl gray), my kids singing and dancing to the Coco soundtrack, mommastrong.com 15 min daily workouts at the crack of dawn (5:20am), leopard print anything, Getting gifts for fiends struggling to cope during the pandemic, my sister and friends and our endless text chains, your videos!, family dance parties, my husband cooking, baking, showers, clean sheets (not much better), treasured nights when no one wakes me up during them, Rothys (have cherry red and leopard print - when you wear almost all black and gray and denim the are perfect pops of color and just feel like massively elevated flip flops! Scared for the weather getting colder because I don’t remember what I wear in my feet when it’s cold...). There is more and, wow, this has been an awesome exercise to do! I didn’t know there was so much that was cheerful. I need to keep a list and then go back to it if I need cheering up! Thank you! (I notice that my job is not on this list 🧐)
P.S.I wear easy dresses all summer (mostly just tshirt dresses - easy to dress up or down) but in the north east they hibernate because I hate tights and they are the epitome of uneasy.

Ooooh!! Awesome tip about the glue. I bought three pairs through your link and for me the mediums are truly unwearable. I may even need to file the short ones. But I went HAM with the glue and then when I needed to get them off because they were too long, it was a bit difficult. The glue is a million times better than any glue I've used in the past and I really liked them, but I was planning on doing a bit more research before I put on another pair. I love square nails, they suit my hands the best and look the most realistic. But I'm going to give the short sort of round ones a go next and save the short square ballerina ones for last.

my recent cheering up has been done by Love Island! i'd never watched any other season before, and i am shocked at how, uh, raunchy it got (it was on CBS, not cable!), but also i became fascinated by these young people's (i'm 40) emotional intelligence. i'm guessing part of this was because they were limited in how much alcohol they could drink, but it was so weirdly heart warming to see this competition show actually not be that competitive at all. everyone seemed so supportive of one another. totally mind blowing and terribly addictive, in a good way. highly recommend if you're into anthropology/sociology/psychology/pop culture. ;-)

    Happy Canadian thanksgiving! 😊
Instead of what's cheering me up, I'm going to switch it up and say what I'm thankful for. The most relevant one right now is my roommates, none of us were able to go home for the holiday so we had a dinner together and it was a great time! I'm also thankful that I am living in an area that is extremely safe pandemic wise which made it so I could go home during the summer. The governments of the Atlantic provinces deserve all of the praise possible. I'm thankful for all of the amazing people in my life who are keeping me going right now as well. I don't know what I'd do without them. And finally, I'm thankful for my family cat, Hank. He's the biggest joy of life and I miss him every time I leave my parents.
A food favourite right now: mac and cheese. I learned how to make a roux and it made my mac and cheese 10x better than it had been. I also found an herb and garlic cheddar which is so unbelievably delicious in mac and cheese. Comfort food at its finest!

    - an amazing NYT recipe:
    Salmon With Sesame and Herbs
    By Alison Roman
    4 servings
20 minutes, plus 20 minutes’ marinating
The easy-to-memorize marinade for this fast broiled salmon hits all the right notes: salty, sweet and sour. The fish emerges from the oven with caramelized, crisp skin, which contrasts nicely with a salad of fresh parsley or cilantro (or both), tossed with sesame oil and rice wine vinegar. Close contact with the intense heat will help crisp up the skin, while keeping the rest of the fish tender and flaky. To avoid overcooking the salmon, be sure to buy fillets that are at least 1 inch thick, and keep an eye on the fish.
    INGREDIENTS
    3 tablespoons low-sodium soy sauce
3 tablespoons light brown sugar or honey
4 tablespoons unseasoned rice wine vinegar
Kosher salt and ground black pepper
4 skin-on salmon fillets, 4 to 6 ounces each, at least 1-inch thick
2 tablespoons raw white sesame seeds
1 small shallot, thinly sliced into rings
3 cups cilantro, parsley or both, tender leaves and stems
    1 tablespoon toasted sesame oil
    PREPARATION
Combine soy sauce, light brown sugar and 3 tablespoons rice wine vinegar in a wide, shallow bowl (or small baking dish) and season with salt and plenty of black pepper. Place salmon skin-side up in the marinade and let sit for at least 20 minutes, or up to 2 hours.
Place a rack in the top third of the oven and heat the broiler.
Place salmon skin-side up on a foil-lined baking sheet; discard the marinade. Transfer to oven and broil until the salmon is cooked through and the skin is bubbling and lightly crisped, 5 to 7 minutes.
Meanwhile, toast the sesame seeds in a small skillet over medium heat, tossing frequently until seeds are golden brown and fragrant, 3 to 4 minutes.
Toss shallot rings with remaining 1 tablespoon rice wine vinegar in a medium bowl and season with salt and pepper. Let sit for a minute or two to lightly pickle, then add the sesame seeds, herbs and sesame oil and toss to combine.
Transfer salmon to a large serving platter and spoon the remaining marinade from the sheet pan over the fillets. Top with sesame and herb salad and serve.
