For those wondering, that gush of blue was blood, and the octopus died in that moment. The movement afterwards is due to the nerves. For people who don’t know, Octopus have a decentralized brain system. This means the octopus almost has part of its brain in every tentacle making the brain the body. This makes it so when the main part of the brain is cut off the octopus stops feeling pain and thinking but continues to move because other parts of its brain is still alive. So, In summary, the octopus was killed humanely and painlessly.
Somehow I don’t think having your brain and guts ripped out of your head while your still conscious is all that painless.

Actually, he killed it very quickly. He cut the major vein and nerve bundle first. The blue spray is actually the blood of the octopus. ( in case you weren’t aware, I don’t want to assume anything.) Then he removed the major organs. They continue to move after death. Most animals do. I’m not sure where you live in the world, but I know we are not exposed to the actual butchering process in America. Of all the octopus videos I’ve seen, this one of the most humane dispatchings I’ve seen. 🐙😭

Guys complaining about the octopus being killed brutally are wrong. It's the octopus's fault for being so delicious. Had to turn its brain inside out because of that. Okay so I assumed that the person was chopping up the whole octopus instead of killing it because of the comments. Turns out he actually moved pretty quick and salvaged the parts that the customer wanted. Tragic that head has to be flipped inside out to do that, but that's how it's done.
The way it was moving around for about 5minutes after it was cut looks like it was alive. Especially when it tried to hide
