I truly miss your mom. It reminds me with my sister who pass away almost 2 years ago from complications with other diagnosis she took was on dialysis. I don't know why I started crying while your cooking pancit.. I love you Judy. I know everyday you must think of mama.

I love how you wait for Keira to taste stuff because she knows exactly how it should be, she obviously has a great palate and is a total foodie like Benji and, once you nail it totally, as you nearly did on the pre birthday trial, you’ll make it just like Mama from then on. ❤❤

I use super Q noodles - they’re more sturdy. I don’t pre-soak or boil the noodles. When I saute all the veggies and meat, I put extra liquid and when veggies are half cooked, I remove the veggie/meat mixture and leave the liquid part. I then put the dry noodles and let it soak the liquid . If you need more liquid you can add chicken broth. You can season the noodles with soy sauce ,oyster sauce ,fish sauce ,pepper ,chicken bouillon. And keep mixing till you achieve the perfect flavor.When done,add back the veggie/meat mixture and combine. That way ,you won’t have soggy noodles or overcooked veggies.
I hope judy takes notice on your suggestions. This is the best way to cook pancit bihon, i do the same. Use good broth too
I use Super Q bihon too. Overtime you will really know the best brand for which pancit you will be making. For bihon super q over excelente. But for pancit canton I always like excelente. I make pancit bihon mixed with canton.
Yes that’s the winner noodle brand! Doesn’t break.

I love pancit and I have tried many of them but nothing is better than what my mom makes. It’s the comfort I think. I actually record my mom and wrote it down how she makes it. (She has Alzheimer’s so she’s forgetting a lot but I will always have this memory with me to pass down to my kids).So you making it the way your mom makes me happy.
Judy no need to soak the noodles in the water, cook it in the veggies soup just add more water, take out the veggies first😅.

3:29 I love that Judy goes to Kiera to get her opinion on Mama’s pancit. Since my mom passed, I also try to perfect her recipes. I wish I wrote down recipes or paid attention more. My mom never wrote anything down and just told me what it was supposed to taste like.

Please do a cook book series. With one dedicated to your mother. I always wanted Benji and your mother to do more videos together. I feel like I can always smell and taste the food on the other side of my screen.
Hi Judy! Quick tip on the rice noodle. My parents own a chinese restaurant and there is a trick to get them to not break.
1. Heat water until it is boiling
2. Add the dry rice noodle
3. Cook until 60-70%
4. Strain (do not add cold water)
5. Put noodles on a flat surface and cover with it a large plate. On top of that plate add a clean kitchen towel. This is to let the steam cook the remaining noodles. Keep like this for 3 minutes.
And then you will get chewy noodles!

Glad to see your experimental pansit cooking. Always buy that has "Corm Starch" instead of "Rice starch"; Super Q is also great you can soak in 5 to 10mins. Then of course, your moms direction. Yummers! Next time you know it, you will be an expert of cooking pansit. hehehehe.......

Hi Judy, I just want to share how we cook pancit here in the Ph. We don't boil the noodles separately you can actually cook it with the soup that you made with the vegetables and chicken in that way the noodles will absorb the flavor while cooking. So, first saute the onion and garlic then the chicken, add vegetables, add soysauce, and chicken broth boil for a few minutes. Add flavorings don't forget the ground pepper. Remove the vegetables and chicken leave the soup then put the noodles in it and let it cook there. When it's cook the water will be dry [the noodles will absorb it ]so make sure that the soup is not too much for the noodles less is better . If the noodles is still uncooked you can add a little more chicken broth. When there's no more soup o when it's dry put back the vegetables that you set aside. Hope this helps. Love you Travis Fam

I hope you wrote it down as u go or vlog it so u know what u did last time, i would totally forget so I have to make sure I write it down! Hi Judy! Pancit looks yummy! My mom uses rotisserie chicken from Costco sometimes to save time and to add more flavor. As for the noodles, sometimes you don't even need to soak them in water, just straight to the sauce to soak up all the flavors 😁 Aloha!🤙🌺
