Benjie, to make the atsuete powder more vibrant in color.. Try to add the powder into the hot oil before sauteing the meat and aromatics.. Looks delish with the chicharon and egg! 😉
Nice attempt and tribute to Mama. Use annatto seeds instead of powder. Cook in oil first and then cook with meet. Add little cornstarch mix to make sauce thicker and cling to noodles more.

There’s a trick in slicing sayote (chayote), slice the top off first then circle it around the part where you chopped it, so that all of the sap will come off. You can wash it off before peeling it, makes it easier to handle as it is not slimy anymore. Not sure if I explained that correctly 😅😂
That rice sticks are not for palabok... the orange packaging is the traditional and what pinoy in th Philippines use it. That's for pancit bihon i think..coz its thin... the special palabok orange packgaing is the right noodles... and also its kinda different coz plabok does not have sayote, cream of mushroom at all... BUT since its a MAMA's version then its totally fine :) Enjoy palabok

I am Puertorrican we eat also Chayote, we share with the Filipinos many vocabulary words. In Puerto Rico we make rice with Chayote and Ham all together.. But we don't use it green. Judy does Adobo and for us Adobo is condiments to cook. We also fill the chayote with ground meat like a stuffed pepper.. Love your videos..

If you can find real annato seeds that would be better, it’ll make it bright orange in color. Just heat the seeds directly n the hot oil, i usually put annato seeds before sauteing, just disregard all the seeds when the color goes out. But definitely that one is fine and still will taste perfectly. Im happy you can live with mama through her recipes, missing her now and her giggles. ❤
Aww🩷 Benji! I’m Mexican and my mom loves boiling the chayote like potatoes, we don’t peel them since they soften up! My mom likes to say son primos (cousins) de los potatoes lol We dice them up & put into our caldo de pollo (chicken soup) 🍲😍!
For me I substitute fish sauce to chicken bouillon and kaamansi or lemon is a must. Squeeze on top of palabok. I also love extra spring onions on top. Chibog na! 💖🇵🇭

That's an interesting palabok sauce! I like seafood but I'm not big on the prawn head juice/flavour either. For palabok sauce I just use Mama Sitas palabok sauce instead of making it from scratch with the prawn head.
Should have gotten the palabok seasoning mix. It's way easier than using coconut milk? Wrong noodles too bro. Need the thicker ones not Bihon one. Mama's recipe? Should have gone with Mama Cita's recipe.

What's the purpose of a cutting board just for garlic? Why can't it be prepared on the same board as the onions and shallots?

I use 4-5 envelope of that asuwete/annato powder to get the great color 🙏🙏🙏❤️❤️❤️
