    Good to know I can use the speedi for making my yogurt but also to turn this into sour cream: To 16 oz. of the drained yogurt add one tablespoon of lemon juice. Then refrigerate overnight. It tastes like the store bought also I use a clean sour cream container to identify. Dinner guests don’t know the difference.

    I started making yogurt in the seventies with nothing more than a stainless steel pot and an oven. I scald the whole milk,let it cool some add the previously made yogurt about a cup per gallon of milk, stir it in, place it in the oven with the light on, leaving it until it's done (usually overnight),strain and consume. The way I use for baking. Very simple.

    What about using proofing for yogurt?

    • @TheSaltedPepper
      @TheSaltedPepper  Год назад +1

      That should work, but the heat source is at the top and it only goes to 95F. I wasn't sure if it would provide enough warmth down to the bottom that's why I used sous vide. However, since you can make yogurt on the counter in a warm area, it really should work fine.

  • @averyvaliant
    @averyvaliant Год назад +2

    If it makes you feel any better Louise, the UK version of the speedi doesn't have the yoghurt function OR the sous vide one.
    Crazy.
    That yoghurt looks amazing though, if I wanted to make a fruit yoghurt, such as strawberry, would you just add that in after the final product has cooled?

    • @TheSaltedPepper
      @TheSaltedPepper  Год назад +1

      You might be able to use the proof function to make yogurt in it! Yes, I would add the fruit after the yogurt has been cooled and strained if you are straining it.

    Actually, the reason for heating the milk before making yogurt is to deactivate a protein enzyme that prohibits the yogurt from forming.

    A couple of questions. I have the ninja foodie with a yogurt function. Could you please show or tell us how to adjust making yogurt in that? Also what yogurt should I buy at the store for the starter since I have never made yogurt?
    I make my own pickles and Saurkraut.

    • @TheSaltedPepper
      @TheSaltedPepper  Год назад +1

      You add the milk and hit the yogurt function. It will boil and then let the milk cool down. When the milk is cool enough, it will tell you to add the starter. Add in the yogurt starter and hit start. Then it will go to the ferment time. Any plain yogurt with active cultures will work.

    Help please! For the past 8 months I have been the happy owner of a Ninja Foodie XL Pressure Cooker Steam Fryer with Smart Lid. I used this appliance multiple times daily, looking to Louise for much of my inspiration and direction. It has suddenly stopped working 😢. The help line looked at what was happening via a video link and said I had a year warranty, so they could send a new base at no cost to me, but that this model is being discontinued and it would take 2-4 weeks to receive the new base. The alternative they offered is to purchase a new unit from the SharkNinja website at a 70% discount. That led me to this video of the Speedi. Thoughts, anyone? Should I just wait the four weeks for the new base? I have been very happy with the Foodi up until now.
