Whilst every country in the world has their own version of sausages, and they all have their own names, basically, there are probably only about 10 basic sausages worldwide, in slightly different formats, if you really think about it. This one however, seems different and kinda reminds me of boerewors. I have never heard of culantro, but will substitute with coriander (cilantro), which is the prime aromatic of boerewors anyway. Anyway, I absolutely love your channel and binge watch it all the time, you truly have a gift for explaining this stuff, like few others. Please keep them coming.

I love chorizo of any description, this one looks amazing. I use an electric grinder to grind my meat for sausage and salami making but I regularly have to replace parts only after a few grinds. So the sausage maker grinder would be a welcome addition to my sausage making arsenal.
I used to get this sausage from a neighborhood market owned by a Columbian expat. His was same color as yours. One of the few advantages about being in Chicago.

I use a $30 Amazon hand crank with a horn attachment, not very efficient but gets the job done. Ive always wanted to try my hand at sausage making and I love it, my next endeavor is kielbasa. After that your Mexican chorizo, but this looked interesting so I might have to try this one too. Love the channel, keep them coming!
I love Chorizo, and this Columbian Chorizo recipe looks fantastic! I used to make sausage regularly with my old neighbor, who had a cast iron table top meat grinder that he added a motor to, a F. Dick 9 Liter stuffer, & 2 commercial Cryovac machines. We both moved so I don't have access to his sausage making equipment any longer, and I sure miss the whole process & enjoying the finished product. The 12# grinder would sure be a nice start to getting back into it Keep up with these great videos!

I just started making sausage. I have made 3 batches and am in love with this!!! I use the meat your maker 1 horse grinder. I also use the meat your maker stuffer for now.
Even though I am Cajun I fell in love with real Chorizo when I lived in SoCal. Eric if this chorizo taste as good as it looks it is beyond great. My mouth is watering just looking at it.

I have been using a hardware store special. Weak motor and lots of nylon gears. I used a friends commercial grade grinder a few times and it makes a huge difference in grind quality and effort.

Eric! I’ve been following you for quite a while now and I Absolutely love Celebrate Sausage! I grew up making venison sausage from hunting harvests. I currently have a plastic grinder that came with a pasta making kit. So that limits me to using pre-ground meats or knife cuts &/or food processor. Loving this season of Celebrate Sausage, keep up the strong work 👍
+Hey Eric That Columbian chorizo looks great, I believe I'll try it. My current grinding set up is a Kitchen Aid with a metal grinding attachment. I have a dedicated stuffer, as the grinding attachment stuffer is way too slow.
currently use a Valley Sportsman #8 grinder. Have used a #12 manual, Kitchenaid attachment, and have also used a very cheap dedicated #5 that broke after 20 uses. This recipe sounds great!
This looks very interesting to me, I think the best sausage I’ve made to date is the Texas bowl of chili sausage, it was so unique, then I thought the Cajun green onion would be my next project, but this sausage really intrigues me, the 48 hour cure is super interesting, this is such a pretty end product, I love coarse ground sausage, it’s my favorite way to make it, I make coarse hound sometimes when I probably shouldn’t, but that’s how I like it, I must try this soon, thanks again Eric for a phenomenal episode of celebrate sausage season lV just awesome 🇮🇹😎🇮🇹

I can see how people my freak out a bit about letting the sausage hang for a day or two, great video as always . I started out using my better half's kitchenaid which she frowned she was none to happy with So I bought a cheap dedicated grinder the proved to be too week too noisy and all too short lived so now I'm back to using the kitchenaid...
Wow great sausage I can't wait to try it. My meat grinder started with a hand grinder since that was what my mother used. Then a Kenwood stand mixer with a grinder attachment, then my current grinder which I have had for over 15 years, Chinese 1/2 hp grinder. I would love a larger one.
Sure would love to upgrade from the old 1/4 horsepowered Hobart. It's worked for many years, but a freshening of equipment to the #12 from the Sauage Maker would be a welcome change.

I have a Bass Pro shops grinder... It was a Father's Day gift several years ago and it is what got me started on Charcuterie!

Eric! I’ve been following you for quite a while now and I Absolutely love Celebrate Sausage! I grew up making venison sausage from hunting harvests. I currently have a plastic grinder that came with a pasta making kit. So that limits me to using pre-ground meats or knife cuts &/or food processor. Loving this season of Celebrate Sausage, keep up the strong work 👍
Currently using a kitchen aid mixer for my grinding, that grinder looks like a beast!
Great series again this year can’t wait to try a few of these. Right now just using kitchen aid grinder accessory.

That Columbian chorizo looks great, I believe I'll try it. My current grinding set up is a Kitchen Aid with a metal grinding attachment. I have a dedicated stuffer, as the grinding attachment stuffer is way too slow.
currently use a Valley Sportsman #8 grinder. Have used a #12 manual, Kitchenaid attachment, and have also used a very cheap dedicated #5 that broke after 20 uses. This recipe sounds great!
This looks very interesting to me, I think the best sausage I’ve made to date is the Texas bowl of chili sausage, it was so unique, then I thought the Cajun green onion would be my next project, but this sausage really intrigues me, the 48 hour cure is super interesting, this is such a pretty end product, I love coarse ground sausage, it’s my favorite way to make it, I make coarse hound sometimes when I probably shouldn’t, but that’s how I like it, I must try this soon, thanks again Eric for a phenomenal episode of celebrate sausage season lV just awesome

I used to use the Kitchen Aid, and man once i got a cheaper end #8 grinder from BassPro, thats just nice!

I can see how people my freak out a bit about letting the sausage hang for a day or two, great video as always . I started out using my better half's kitchenaid which she frowned she was none to happy with So I bought a cheap dedicated grinder the proved to be too week too noisy and all too short lived so now I'm back to using the kitchenaid...
Wow great sausage I can't wait to try it. My meat grinder started with a hand grinder since that was what my mother used. Then a Kenwood stand mixer with a grinder attachment, then my current grinder which I have had for over 15 years, Chinese 1/2 hp grinder. I would love a larger one.
I'm trying this for sure. That fancy grinder will do much better than the Kitchen Aid
Sure would love to upgrade from the old 1/4 horsepowered Hobart. It's worked for many years, but a freshening of equipment to the #12 from the Sauage Maker would be a welcome change.
Enjoy the videos. Old grind (brand unknown) that I have been able to piece together that keeps it working.
