RECIPE
Ingredients
10-14 chicken legs (similar size if possible)
1 - 15oz bottle of Weber Dry Rub
2 cups of your favorite sauce
Or
2 cups of Bluff City BBQ
½ cup apple cider vinegar.
½ cup your favorite sweet BBQ sauce
(For example sweet Baby Rays)
Or
2 CUPS 0f Bluff City Sweet Heat
4 cups franks hot sauce
1 cup roasted pineapple habanero (glaze/finishing sauce)
1 cup brown sugar
5oz tiger sauce
Juice of 1 lime
WOOD
Any fruit wood such as apple, cherry, or peach
(In the video we use plum wood)
Instructions
Bluff City BBQ Glaze
Mix Vinegar and BBQ ingredients together
Bluff City Sweet Heat
Add Wing Sauce to a Med size pot
Puree roasted Pineapple habanero sauce and add to pot
Bring ingredients to a simmer
Add brown sugar
Add tiger sauce
Add lime juice
Mix well and simmer for 15 min stirring occasionally
Following instructions from the video
-Pat legs dry with a paper towel (front and back)
-Apply an even amount of rub to both sides of the chicken legs.
-Let chicken legs rest for 30 min - 1 hour at room temperature prior to cooking.
-Set up your charcoal grill for indirect cooking by placing only coals on one side of the grill.
-Heat Grill to ~400F
-Place chicken legs on grill away from the heat (opposite side of coals)
-Cook chicken legs for 20 min
-Flip and rotate halfway through cooking.
-Add layers of flavor by adding more seasoning
-Cook chicken legs for ~another 20 min or until an internal temp of ~185F and juices run clear
-Remove from the grill and season again and toss in your favorite sauce.
-Return chicken back to the grill for 5-10 min on the indirect cooking side of the grill
-Remove chicken from the grill let it rest for 5-10 minutes. prior to serving. - Хобби

Neat, I've always wanted to try some kiln-dried firewood in my Weber to see what would happen. Looks like a decent firewood should burn hot and clean. Have you experimented with different wood?
Yes, we have tried lots of different wood to smoke and cook with. you can actually look up a chart on google to give you an idea of what kinds of wood pairs well with different meats. Dont just use any wood. Some wood is actually not very good to cook with. Hope this helps. Thanks for watching!

What flavor of wood did you use.

What kind of wood ya’ll were using
I believe in this video it was plum but any fruit wood will do. Apple, cherry, peach all give a lighter smoke profile
What did you use too ignite the wood ?
Had to look at some old videos. We layered the wood in the bottom of the weber then lit a large hand full of charcoal in a separate chimney. When coals were ready we dumped them on top of the wood in the weber then waited until the wood was ready.

Yes olive oil. It acts as a binder and helps coat the meat evenly. Also helps with the color as well. Thanks for watching 🔥🔥
