1 lb 96% fat free ground pork
1 red onion
1 poblano pepper
Cilantro to taste
2 Roma tomatoes
2 limes
5 tsp white vinegar
1 1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp Mexican oregano
2 tbsp tomato paste
4 tbsp light sour cream
1/2 tsp chipotle powder (to taste)
1/2 c reduced fat Monterey Jack cheese
12 low carb tortillas
1 1/2 tsp chicken concentrate stock
Wash and dry all produce. halve and peel onion. finely chop 1/2 onion, very thinly sliced other half. core, seed and diced poblano and into half inch squares, roughly chopped cilantro, core and diced tomato. half lime, cut one half into wedges
Place a sliced onion, vinegar, 4 teaspoons of sugar substitute,l teaspoon of salt, and 1 tablespoon of water in medium bowl.
Toss until sugar and salt is mostly dissolved. Set aside, tossing from time to time.
Heat a large pan over medium high heat, spray with cooking oil. Add pork, breaking up meat into small pieces. Season with salt and pepper. Cook, tossing, until browned, 4 to 5 minutes. Transfer to a plate and set aside. Add more oil spray to pan and add poblano and chopped onion. Seasoning with salt and pepper. Cook, tossing, softened, 3 to 4 minutes. Add pork to pan along with seasonings, stock,
concentrate, 2 tablespoons of water and 2 tablespoons of tomato paste. Scrape up any brown bit on the bottom. Cook, stirring until thick and saucy 2 to 3 minutes.
Combined sour cream, and a squeeze of lime juice, and a pinch of chipotle powder and a small bowl. Stir enough water to give mixture a drizzling consistency.
Seasonal salt and pepper. Wrap tortillas and damp paper towel and microwave on high until warm about 30 seconds.
Divide filling, tomato, cheese, cilantro, pickled onion, and Crema (sour cream mix) into tortillas. Serve with lime wedges on the side for squeezing over. I like to serve this with zero point refried beans and corn.
