    Low Carb Caramel Profitroles No Sugar No Flour
    Ingredients
    For the Profiteroles:
    100 g almond flour
    A pinch of salt
    2 tsp xanthan gum
    150 g water
    30 g unsalted butter
    2 eggs
    For the Cream:
    100 g cream cheese
    100 g Greek yogurt
    100 g sugar-free caramel sauce
    Sweetener to taste
    Instructions
    Prepare the Dough:
    Combine almond flour, salt, and xanthan gum.
    In a saucepan, bring water and butter to a boil.
    Add the dry ingredients to the boiling water and stir vigorously for about one minute.
    Let the dough cool to a warm temperature.
    Gradually add eggs one at a time, mixing thoroughly after each addition.
    Transfer the dough to a piping bag fitted with a round tip and pipe small mounds onto a silicone baking mat.
    Bake in a preheated oven at 200°C (400°F) for about 40 minutes.
    Prepare the Cream:
    In a bowl, mix cream cheese, Greek yogurt, and sugar-free caramel sauce.
    Beat with a mixer until smooth. If there are any lumps, blend with an immersion blender.
    Assemble:
    Fill a piping bag with the cooled cream and pipe it into the cooled profiteroles.
    Drizzle with additional sugar-free caramel sauce and garnish with nuts and blueberries.
