This brings back memories from when I was a kid I think about 6 yrs old. My family was poor as dirt. We got Commodities. This was like a government food program of some sort but we always got powered eggs and peanut butter that came in a silver metal can. Best peanut butter ever lol. the eggs had a taste I can't explain but all of us kids liked the scrambled eggs made from it. and we had chickens at the time. Very odd that I remember those 2 things so clear lol. But anyone one that ever had that peanut butter will tell you it was the best ever lol. So I'm wondering if dehydrating the eggs make the taste like those powdered eggs back then. Yeah that was sometime in the 60's lol.

We had to receive commodities too last year and when I was abt 8 yrs old, I loved the peanut butter, powdered eggs, and the American cheese was awesome, my mother made enchiladas out of the canned shredded pork, I loved it, she used ti make the powdered eggs mixed with milk, diced onions and bake them, we loved getting that little fluffy square of scrambled eggs!

I always loved our food supplement as well! The PB and American cheese were awesome, and I had forgotten about the pork but we liked that too.

Those powdered eggs were the best!! They would come to the Navajo reservation and give my family a box of commodity food is what we called it. The cheese was the best and the silver cans that had a cow for beef and a chicken for chicken 🤣 those were the best!!

Dried eggs are awesome for it's reduced weight and size and storage time. For bug-out you can pre-add salt and pepper.

THank you, what kind of inner tray is that which has a rim to hold liquids? I have a square dehydrator from Nesco and have the flat small food, fruit roll up thing, but it does not have a rim... just bought and don't see such attachment listed to buy. Any suggestions? THANKs!

InLaws Attic It's a flexible plastic tray that came with the dehydrator. It really depends on the one you purchased. The ones I use are on our store site herebigfamilymarket.com/category/household/dehydrating/We have the nesco gardenmaster... Hope that helps!

+Dennis M I start with 1 to 1. Sometimes it takes a bit more, but not usually.

Why don't you boil them first and then dehydrate them that's what I always do. Then I add cloves to it because of the health and it's also antibacterial

so..... what do you do when it comes time to cook these eggs? Add milk or water or something? Can you tell I don't have a dehydrator and have not cooked with dehydrated eggs?

Nifty Thrifty Bits Using them in recipes is (in my opinion) the best use. What we do is a 1 tbsp powdered egg to 1.5 tbsp water ratio. I have tried them as scrambled and they are edible... but just on the low side... they have a different texture that I'm just not used too. A little milk helps, and franks red hot sauce does as well. There is also an old scripture from the cooking bible- Butter covers a multitude of sins... and it's true here as well ;)

What is the ratio when you rehydrate them and how do you rehydrate them exactly so I can share the information with my children
That is the one thing that I haven't seen people discuss on here is how much to measure out per egg and how much water to put back in it and the process of making of making the eggs like for baking or for actually making say scrambled eggs

I have done 1T egg powder with 2 T water to make the equivalent of 1 egg. I've also read that it's perfect with 1 T +1 t water and will try that next time. If scrambling eggs and too much water, just cook until it evaporates out. I experimented baking banana bread with 2 T powdered eggs with 6 T water (to replace 2 eggs) and came out great.
