Without them we would be basically going by feel, and that just doesn't seem very scientific to me. I only buy fireproof equipment now, it costs a bit more but anything else just isn't worth the risk.

What is the purpose of dipping the sides only?
Wood looses most of its moisture through the end grain. Sealing the ends slows down the moisture loss in the wood and prevents cracking.
