But when it comes to Uncle Clyde in Paramin, I just love it even more I reminds so much of growing up especially when me and brothers would visit our grandmotter in Laventille on the Hill who would make it on a Saturday or Sunday for breakfast. The BEST times growing up.

Yes my mother still does like that fireside potbake...fire on tip and fire underneath....nuttin beats d country life....Hot pot bake with butter and cheese and ah hot cup if cocoa tea....yummmmm!!!!!

I realized he used a whole shortening. But how much flour and baking powder? I would love to recreate this. He put the shortening in after the dough has come together basically. I love it. 👍🏽
We used to make this on a metal plate we called the stone. I also had a stone here in Brooklyn but can/t find it now. Seeing him break up that bake, it would go good with some salt-fish and spinach.
