Yup, that's how they do it in Oaxaca. My mom told me that if a girl was scared to flip tortillas, in the "comal", someone would put her hands in it, so she can learn not to be scared anymore. Women had to learn to cook, because they're expected to get married someday.
You have to remember Mexican cuisine is very regional. Every Mexican state has many regions & within each of these regions no two dishes are made the same. The way take for instance tamales are made.Some have more vegetables inside while others may have seafood inside. That includes the wrapping, how the masa is prepared. All can be simple & complex in flavors and technique.
Aztecs, real name Mexica are northern migraters from the midwest, they entered the heart of Anahuac during the 1300s. Zapotec civilization is way older then Mexica civilization, Zapotec people are as old as the Mayas.
RIP Chef, this episode is what inspired me to travel to Oaxaca and open my mind to try new things.
