How to Make Blueberry Streusel Muffins! | LIVESTREAM w/ Anna Olson

  • Recipe below! I love a blueberry muffin that makes you imagine an exclamation mark after the word ‘blueberry’ when you take the first bite! To maximize the blueberry flavour, I use a combination of fresh blueberries and dried blueberries, and a fluffy batter with a hint of lemon absorbs the blueberry aromas as the muffins bake.

    Makes 12 Muffins
    Prep Time: 15 minutes
    Cook Time: 25 minutes
    The muffins will keep in an airtight container for up to 3 days or can be frozen for up to 3 months.
    --------
    • Ingredients •
    1 ¾ cups (262 g) all-purpose flour
    ½ cup + 1 Tbsp (112 g) granulated sugar, divided
    2 tsp finely grated lemon zest
    2 tsp baking powder
    ¼ tsp fine salt
    ¼ tsp ground nutmeg
    ½ cup (115 g) unsalted butter, melted (still warm is OK)
    ½ tsp ground cinnamon
    2/3 cup (160 mL) 2% milk, at room temperature
    2 large eggs, at room temperature
    ½ tsp vanilla extract
    1 ½ cups (190 g) fresh blueberries
    ½ cup (75 g) dried blueberries
    Note: Fresh blueberries are easier to work with when baking blueberry muffins, but sometimes frozen are closest at hand. You can replace the fresh blueberries with frozen berries, but add them still-frozen and after tossing them with 2 Tbsp (18 g) all-purpose flour to help prevent the berries from streaking the batter.

    • Directions •
    1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners
    2. Whisk the flour, ½ cup (100 g) of the sugar, lemon zest, baking powder, salt and nutmeg together in a mixing bowl. Stir in the melted butter and blend until the mixture is an even crumbly texture.
    3. Measure ½ cup (75 g) of the flour mixture to a separate bowl and stir in the remaining 1 Tbsp (12 g) of sugar and the cinnamon. Set aside.
    4. Add the milk, eggs and vanilla to the flour mixture and whisk until combined (but a few little lumps are OK). Stir in the fresh and dried blueberries.
    5. Divide the batter between the muffin cups and sprinkle the tops with the streusel topping. Bake the muffins for about 25 minutes, until a centre inserted into the centre of one comes out clean. Cool the muffins in the tin for 10 minutes, then remove them from the pan to cool completely.

    I love these recipes. I coud use a vid on making European-style cake icing. I`ve done it once. It was lovely, but took me for ever. There must be a better way.

    I just baked these muffins. In your recipe you say to separate 75g of the flour mixture, which I did. I think next time will do about 40g because I got some leftover streusel and my muffins turned out low on sweetness.

    Can you please correct your cranberry scone recipe. You say 2 cups of flour in the video but the recipe says 3 cups. People are asking but you’re not answering…..what’s up with you with that? 🤔

    Hey Anna, is the flour measurement (262g) correct? My batter was very wet. I compared it with the other blueberry muffin recipes of yours, with the other ingredients having similar volume, and it calls for a lot more flour (on top of that, we're supposed to remove 75g of it to make the strusel). Only when I added more flour to it (+112g more) did it become more more like a muffin batter.

    Hi Anna from Victoria in southern Australia. For health reasons I am trying to convert all my baking to wholemeal flour and non-white sugar. You've said previously I think that wholemeal flour can be substituted for about half of the flour content, but for this recipe would you recommend a type of sugar, ie raw or light brown, perhaps? Many thanks. I would certainly appreciate more wholemeal recipes.

    I’m so intrigued by the instructions saying mix til smooth.
    I thought that for muffin mixes, you only stir slightly til ingredients are just combined and then pour them into the pans.
    Is this something new?

      I used regular bake (no convection) for these muffins so that the streusel wouldn't over-brown.

      You can generally replace all-purpose flour with whole wheat flour up to 50% without compromising the texture of the end result. It's OK to replace 100% whole wheat flour in a recipe like this, but you may find the muffin is a little more dense (but still tender and tasty).

      I recently ( Xmas) baked the chocolate brownie cookie recipe from your holiday video. I made 2 batches one plain and the other with walnuts . They were rich and decadent. I wonder which one of your cook books has the recipe and other Chocolate recipes ( cakes, brownies , etc) . I also recently made a chocolate cake I saw one of your videos , but I believe it was a 3 story cake with lots of frosting etc, so I made a Texas sheet cake, and my daughter wanted milk choc ganache frosting . Do you have a recipe for a rich moist simple dark chocolate cake and semi sweet fudgy frosting ?
