Thanks but do you freeze your cakes before trimming and if you do freeze does it not cause condensation to the fondant?

Yes I use cold cakes, you can freeze but make sure you thaw in the fridge overnight. When you’re ready to use it’s cold and still (firm) but not frozen, by the time you’re done working it’s back to room temperature, no condensation. Condensation happens when you cover a still frozen cake
