    Thanks for the great video! I just finished meal prepping for the week and my prep included a shaved Brussels sprouts salad with chopped walnuts, sunflower seeds, pomegranate arils, dried cranberries, diced green apple, and a maple mustard dressing! So I actually ate Brussels sprouts while watching this video!

    All cabbage types are high in calcium and vitamin C and vitamin K. If you also ferment them, you get an actual IDEAL super food! Especially an ideal calcium supplement. I love sauerkraut

      @@Simnettnutrition because you were busy working on the next e-book (which we love)! I learned that a lot of common plant milks have a lot of added oil in them, and some have greater environmental impacts (water consumption) than others. Appreciate all your time and effort creating content!

    Yum! I roasted some recently with equal parts mustard and maple syrup and they were so good, but I like what you did with the tamari, maple syrup, seasonings and adding the mustard in last. Sounds amazing!

    Love the recipe idea at the end! One of my favourite ways to eat Brussels sprouts is in a slaw. Shred them up thinly and toss with nuts or seeds, maybe some dried or fresh fruit (apples work well), and a dressing. Delish! Love this series!

    Ok I'm not vegan, but I strive for a robust plant-based diet about 85% of the time. One of my sinful exceptions is bacon. Sorry y'all. But Bacon, maple syrup, brussels..... roasted in a cast iron skillet..... I love it.

      Thanks Mel! I definitely needed lots of butter and salt when I was younger to get them down. I have learned that some people taste bitter foods differently. You are probably someone who has those good genes!

      I know, I thought so too! Ohh good idea. There was a bit of omega 3 in these, did you see? During the nutritonal analysis it shows. Nothing like flax seed, but there's some!

    How about Lentils. I make Lentils my taco filler. I just add 4 TBLS of taco seasoning with 2 cups of Lentils and 3 cups of water and cook them in the instant pot for 11 minutes. They are fantastic as a taco filler. Easy too!

    Whoa, I'm not too sure about this. The last time I had brussels sprouts was probably just before the pandemic hit. When visiting family for the holidays, I am forced to endure this disgusting horror on my plate so as to not become unhinged by too much fun, I guess. To be polite I gag down half of one , then cut the rest up, and mix them with a little pile of unfinished food at the edge of my plate. Good thing that as an adult, I cannot be denied dessert for this. Is my hatred of brussels sprouts mostly psychological because of how dreadful they were in my childhood memories? Maybe yes and no. I can't stand broccoli either when it's overcooked or it was left over and re-heated Maybe I have an uneasy relationship with cruciferous vegetables in general. However because they are so nutritious, I will try brussels sprouts again. Maybe just one. I will buy one brussels sprout at the grocerty store, and I won't care if the cashier laughs at me.

      Agreed this is an awesome idea. I like to roast mine with a mix of crushed garlic, dijon mustard, balsamic vinegar, and fresh ground pepper.

      If you don’t have the time to grate them yourself, you could always buy the Brussels sprouts ‘leaves’ from Trader Joe’s. No need to grate the sprouts by hand that way!

    My mom over boiled them for us 50 years ago. I remember her notching the base beforehand. I liked them because I knew they were healthy and I wanted to grow stronger and taller which I did 😊

      Yes, over boiling them can cause them to become bitter too! Haha, maybe I didn't eat enough as a kid, I was too busy downing gallons of milk trying to grow!

      Mine boiled/overboiled them as well! I’m 60, so this was around that same timeframe where I remember hating Brussels Sprouts because they were mushy.

      @@heidikamrath1951 no but my brother in law is so I’ll ask his mom for her recipe 😁 She went vegan after she got cancer diagnosis at 75. She is now healthy at 81. But like my mom and many older people they stopped eating their veggies 😕

    Love brussels sprouts, but I just don’t eat them much because it’s not one of my frequently bought vegetables. Your delicious Brussels sprouts recipe & mustard nutritional tip encourages me to eat them more. Can you do a video on carrots with a few interesting ways to make them. Even though carrots start off plain, they’re still one of my favorite vegetables.

    Adding mustard doesn't increase sulfurophane in the sprout directly. Mustard seeds contain a lot of an enzyme called myrosinase that ends up as sulfurophane when combined with glucosinolates. Check out mustard oil bombs for a less clipped explanation.

    A great recipe: B Sprouts, Yukon Gold potatoes, yellow onion, chopped firm tofu, corn, dash of apple cider vinegar, dash of Dijon mustard, tamari, the powders, and a dash of cayenne pepper. It's simple and amazing. I made it up watching your vids. Ha!

      Until Coach Simnett gets to that, you can check out the LaJaunie family’s cookbook called “Pure Ambrosia.” All plant-based recreations of their favorite recipes growing up. I got it on Amazon during the lockdown part of Covid and made the Okra Gumbo which was delicious. There’s a Jambalaya in the book as well as a Pastalaya…no Po-boy, though. OMG! Looking through the book right now I see a Cabbage Roll recipe!!!! I’ve been craaaaving cabbage rolls and wanted to make them for Thanksgiving but the family wanted stuffed peppers. I know what I’m making this weekend!

    Nice! Just had a bowl of them for Thanksgiving and they are wonderful. I’d like to get your take on blackstrap molasses for vegans. On the one hand it is very high in iron and potassium but on the other hand it is high in Acrylamide.

      You're right, black stap molasses is like the highest in acrylamide isn't it. I don't use it much so haven't given it much thought. It is so high in minerals though. I don't know. Depends how often you have it I guess.

    This is my favorite series on the channel. Would you be willing to do a video on how to select foods that are in season? It’s not nutrition specific, but just going into why it’s important, energy cost for out of season crop transport as well any possible studies on the nutrient levels for both groups if they vary? I’m sure others have done videos on this but I like your video flow/perspective both from a health and ethical standpoint.

    I love sprouts. We get a local veg box and they always come on the stem. I have a 3 tier electric steamer and often steam them whole along with lots of other veg. Love the stir fry recipe and will definitely try it

    Thanks, Derek! That's good to know that Brussels sprouts DO actually taste better, these days. My mom would boil them to death and they just tasted really nasty. Maybe the boiling to death was on her, but not the rest, as much. You know Dr. Greger's chop and wait method that he uses for broccoli? I wonder if that same kind of thing applies to Brussels sprouts, where they need time for the beneficial compounds to develop? That's usually what I do with my cruciferous vegetables, if I have the time and forethought to plan ahead, a bit. I like mustard in some things, but I'm not sure I'd like it with cruciferous vegetables, so chopping and waiting is my preferred method. Blessings! - Claire

    I love brussel sprouts. I’m so glad the PC brand has a frozen bag of them so I can enjoy them whenever. The facts and stuff were pretty interesting. Is it any kind of mustard though? Like would yellow mustard work or does it have to be that grainy stuff you used?

    I love them simply steamed. I like the small frozen ones from Trader Joe’s the best. Sometimes I’ll top with a soy sauce, aminos or vinegar.

    I am a Brussels sprouts addict to the point I probably need to go to rehab. :-D I live on those cute mini cabbages! I sometimes grow broccoli sprouts due to the sulforaphane content. I didn't know about the mustard thing.

    When I was about 4 years old I would always ask my mum to make me a bowl of brussel sprouts for dinner, it was my favourite meal. I would be so happy when she made them for me. I think it was just brussel sprouts, salt, pepper and butter (not the healthiest topping haha).

      I love mini stuff, makes me feel giant! Haha. Baking is okay, but it can really dry them out. These are so meaty and delicious this way!
