I bought my 1st Sportster in 78 it was a 76 Bi-centenial. I changed out the seat for a set up like yours. I Bobbed it so took off all the x-tra stuff, it leaked oil a bit, and I parked it in the kitchen over a turkey pan to catch the drippings. It was AMF, but it never thought about breaking down on me. It was great city bike and a cruising over the road bike. I wish I would have never sold it. out of all my bike's it was my favorite.
I had one off them back in the 80's. Picked it up cheap from brother in law who need some cash quick. They are sweet bikes. This one was completely rebuilt but had a bad vibration which ended up being a cheap fix, front wheel. This was also the last year of right side shift. My fav Sporty was my 71 Sportster XLCH 1000
Very nice job restoring the bike, beautiful. I just picked up a 73 that I'm going to restore myself. Runs good, original paint just like to get it back to original possible. Its the exact bike except I had a Kicker back then. Original price in 73 when I was 19 years old was $ 1,950.00
It's absolutely gorgeous. I love the old Iron Heads.

Apparently there are conversion kits available...? (Not sure if they let you keep the kick start or not.)
