Ill test this hack out with the rub I make. Buttttt ill be adding a tbs or 2 of fresh ground coffee to the rub and then a little apple cider vinegar in the bottle

Use vinegar. The vinegar is not (just) for flavor. The evaporation temperature for vinegar is 20% higher than water, so it will stay on the meat longer than water will, which means you aren't having to spritz it as often, opening the lid and losing heat. (#BBQScience) Maybe do the same hack but add vinegar as the liquid to the drip coffee maker instead of water.
Is the meat trimmed off the ribs basically the same as boneless short rib, but cut from the bone in strips instead of as a slab? BBQ short rib is amazing!

Looks great ! Meat is cheap. Beer in US- Forget-about-it! Even if we can ship here, it would be cheaper to fly to the Netherlands than to ship that Beer here. Lol
You can buy a bottle of Lindemans Framboise for about $7. Flying to NL is a bit more.

That meat is overcooked and dry. How can I tell? He pulls It off the grill and it holds it's shape, no bend, no flex, no drips. 3 hours for a piece of meat that size? No moisture in the cooking chamber? The spritz obviously wasn't enough. Glaze was probably the most interesting part of the whole thing. Final thought is if it was so fall apart and tender, why does he need to force a knife through it?

Putting a pan of water in your cooker is a good thing not a sonna. It does alot for your meat you are smoking what you said about the water is a bunch of bullshit but your beef rib strips did come out looking good but your not smoking for a long period of time eithet
