it might be too late for reply but here goes nothing..
the best time to add masala or spice is when the veggie leaves its water containt so that the masala replace ut and we can get their flavour insidr the veggies as well and as fir the water they are using whole mushroom so it takes longer to cook so adding more water will help to cook it without being too dry or brunt in case of high flame
ps its what my grandma taught me so i am not sure if its correct
